Apple Raisin and Bran Muffins

I am both honored and excited to write this guest post for Snack Girl readers. I’ve been following Lisa’s blog for a while now and have been inspired by her healthy snack ideas. I also love to share healthy eating tips with my readers so it only seems natural that I’d share some of my ideas with all of you.

I‘m a personal trainer and group exercise instructor living just outside of Boston. I lead by example through my blog. Whether it be a workout technique, a healthy recipe or a general health and wellness tip you can be assured that I practice what I preach. Much like Snack Girl, I believe that eating wholesome, unprocessed foods is key to living a healthy life.

Most people are busy, always on the go, myself included. This can make healthy eating a challenge. I know it’s tempting to grab a pre-packaged snack bar, but have you stopped to read the label?

Don’t get me wrong, there certainly are some good (and expensive) choices out there, but most of the others are filled with additives and a long list of artificial ingredients. For this reason I choose to make my own snacks when possible. With homemade, I know what I’m putting into my body and feel great about it.

These muffins are one of my favorites; they are moist, tasty, easy to make and budget friendly. Spend about 40 minutes on these and you’ll have a healthy snack for the next 2 weeks; if they last that long. :)

I decided to put apples and raisins in this batch but I often change it up to create a variety of flavors. You could use just about any fruit or nut in this recipe and it would still be delicious! I’ve used blueberries, cranberries, bananas and different kinds of nuts.

These muffins are only slightly sweet so they're perfect for breakfast or an afternoon snack. They are great with butter while still warm, and paired with a hot cup of coffee or spiced tea. Put some all natural peanut butter on top and your kids won’t miss the sugar one bit. I eat them with a serving Greek yogurt for some added protein.

They freeze well and I recommend doing that if you’re not going to finish them within a few days. When I’m on the go, I like to pull one out of the freezer in the morning which gives it enough time to thaw by the afternoon.

Recipe inspired by Bob's Red Mill Moist Molasses Muffin Recipe. Note: I doubled the cinnamon in this batch to complement the apples and raisins. Sometimes I leave the cinnamon out altogether if it doesn’t compliment my fruit of choice.

Homemade Apple Raisin and Cinnamon Bran Muffins Recipe

(makes 12-18 muffins)

Ingredients

2 cups Wheat Bran
1 - 1/2 cups Whole Wheat Flour
1 tsp Baking Powder
1 tsp Baking Soda
1 tsp cinnamon (I doubled it to really bring the flavor out in this batch)
1 1/4 cup Milk
1/2 cup Molasses (honey works well too)
2 tbsp Canola Oil
3/4 cup applesauce
1 Egg, beaten
1 tsp pure vanilla extract (optional)
1/2 - 1 cup raisins
1 medium to large apple peeled and diced

Instructions

Preheat oven to 400 degrees. Combine wheat bran, flour, baking soda, baking powder and cinnamon. In a separate bowl, blend applesauce, milk, molasses, oil, egg and vanilla. Add it to dry ingredients and stir until moistened. Mix in the raisins and diced apples. Spoon batter into a muffin tin greased with cooking spray and bake for 15-20 minutes. (more like 15 minutes if you make 18 muffins rather than 12)

Yum! These look great! I am debating on what kind of muffin to make today!! Craving carbs!

These are really good muffins. They make my morning brighter every morning when i wake up to my wonderful mother cooking these delicious muffins.:)

I plan on making these. They look delicious! I have a question though, 2 actually, is it 1 and a half cups whole wheat flour or 1 (1/2cup) whole wheat flour? My second question is what type of wheat bran should I use? The Fiber One cereal that looks like twigs or something more like shredded wheat and bran? Thanks in advance. :)

Cheryl, great question! It is 1.5 cups of whole wheat flour. I use Bob's Red Mill Wheat Bran, not the twig stuff. :) Enjoy!
