Greet Spring With Some Bacon (And Asparagus)

Whenever I write about bacon, Snack Girl gets a surge of readers. Why?

We all want a way to have our bacon and eat it too. Bacon, sadly, is a salty, fatty food that is best eaten rarely as a treat. It is basically salt cured fat with some meat attached.

The key to eating bacon and living a long life is to use it as a condiment. Bacon chunks on a salad comes to mind - not the bacon on a sundae from Denny's.

Think of bacon as a flavoring agent and you can mix it with some healthy food to get a delicious side dish. I used bacon below to wrap around a pile of asparagus spears.

One serving of this bacon dish is merely 74 calories and packs a big nutritious punch. No need to feel shame or guilt for enjoying bacon here!

Roasted asparagus is one way to enjoy the fresh asparagus that is hitting our produce section at this time of year. When you roast asparagus with bacon, you get a smokier, fattier, porkier version of the roasted asparagus.

The bacon will not crisp up here (but it is cooked), unless you put it under the broiler for a minute. I was too lazy to attempt that maneuver.

If you find that the asparagus is too dry for you, spray with a fine mist olive oil before you wrap it in the bacon.

My kids managed to eat their serving of bacon without the asparagus (oh well :)

Asparagus Wrapped in Bacon Recipe

Ingredients

1 pound fresh asparagus
2 strips bacon
salt and pepper to taste

Instructions

Heat oven to 400 F. Snap the ends of the the asparagus at the stem end. Wrap 1/2 pound of asparagus spears into one strip of bacon, repeat. Carefully place wrapped bundles onto baking sheet and bake for 20 minutes. Season with salt and pepper.

Divide into four portions (serve each pile of asparagus with 1/2 slice bacon). Eat with a knife and fork spearing a bit of bacon with each bite of asparagus. Enjoy!

I make these also with low-fat cream cheese and prosciutto. Tastes evil, but yet you're getting a big serving of vegetables.

What a yummy snack idea!

I keep a ziploc with crisp LITTLE pieces, fried and drained in the fridge. A sprinkle here and there on a salad or over the top of veggies....yum, yum!!

Love this! I have used procuitto to do this, but my family would love bacon!!

i take 1 or 2 pieces and crinkle/sprinkle the bacon in my egg white scramble for breakfast!

We grill ours, and it is amazing....crunchy bacon and amazing asparagus. If you aren't careful you can burn the asparagus, but with a little practice it is a-MAZING!!!!

I LOVE asparagus! My favorite vegetable! Also amazing with some melted Taleggio cheese. Dip your asparagus & savor! ; ) Or try risotto or tagliatelle (pasta) with asparagus. So many options!

Bacon is also delicious wrapped around green beans...especiaally with brown sugar!!! You could always leave the sugar off, though!

Now that they make uncured bacon (without the nitrites) it's really a good condiment in moderation

I do this, but add a lemon cut in half to the baking sheet. When it's done, squeeze the lemon pulp all over the asparagus - heaven!

Yum! Sadly I don't think I could get my husband to eat asparagus even if *I* were wrapped entirely in bacon.

Bacon usually ends up on sandwiches or green beans when we have it here, which is pretty rarely; but over the holidays I started making an app with a mini waffle, a smidge of bacon, a little piece of chicken breast (popcorn chicken if you're feeling crunchy) and a drizzle of maple syrup, with a toothpick to hold it together. Ok, there is nothing healthful about any of that, but I like talking about it :)
