Banana Peanut Butter Waffles

Actually, please don’t sue me. I hate courts and I am scheduled for jury duty again. Prosecutors and defense attorneys throw me off of juries before I ever get a chance to serve. I think there is something about my Ph.D. that makes them believe that I might pay attention.

What little they know about us Ph.Ds........ We tend to be a pretty sleepy bunch......zzzzzz

Before going to court to be rejected, I made this “Waffledilla” (go ahead and sue me for making up a word).

This is straight forward, delicious, and fun!

Banana & Peanut Butter Waffledillas

Ingredients

2 teaspoons natural peanut butter
1 ripe banana
2 small flour tortillas

Instructions

Heat waffle iron. Spread peanut butter on one half of each tortilla. Mash banana in a bowl and spread on half of each tortilla. Fold tortilla into half circle and cook on waffle iron for four minutes until hot.

My kids decided in the late 80s that I was never chosen for the jury because I didn't wear lipstick which made me look like a militant feminist. :)

How about extra sharp cheddar cheese? - waffle cheese toastie!

Looks yummy! Can't beat PB & banana combo. I actually have a quesadilla maker that I got in a grab gift - works well, but extra piece of equipment. Also, a couple of other lower points products - because I would want more than 1 of these!

Whipped peanut butter (5 pts vs. 7 per serving which I believe is 2 TB) - spreads nicely. And Ole wellness tortillas - there are a few varieties but one (multigrain I think) has about 80 cal and is 1 pt! Of course, now I can't find them in Shaws anymore!

Waffledilla! Very clever...I'm thinking smashed black beans [or leftover chicken], tbsp salsa, sprinkle grated cheddar. Esp like the fact that no spray oil needed...less clean-up. Thank you for another fun and useful invention, Lisa!

It used to be that waffle irons had reversible plates, waffle iron on one side and griddle on the other - perfect for grilled cheese and the wonderful toasted things being described here. My grandson loves PB, honey and banana sandwiches - now I've got a new twist on that! Thanks Lisa. Keep waffle-ing away, you're coming up with some fun stuff!

This looks yummy and I love bananas and peanut butter!! Thanks for all these neat ideas for my very lonely waffle maker(s)!!

Tried it this morning but I decided to use Nutella instead. Mmmm! Warm Nutella is soooo good.

I'm thinking of sprinkling a few mini chocolate chips in there also. Love the idea of using tortillas.
