Love Cheesecake? Give This A Try

I receive all sorts of requests for recipes. One reader wanted me to make a lighter version of cheesecake.

Cherry Cheesecake Bite

Cheesecake? Nooooooo.

I am not a miracle worker and I am not willing to use low-fat versions of the ingredients to achieve a “cheesecake like” cheesecake.

I did do a small cheesecake that was appreciated – see mini-cheesecakes. But, I have never attempted to make a BIG low calorie cheesecake – and neither should you.

Instead, do something much more innovative. Make these Cherry Cheesecake bites in all of five minutes. Cherries are in season right now (and I found them on sale at my local grocery store).

Wash them, dip them in a mixture of cream cheese and powdered sugar, dip them again in mashed graham crackers – and you got a treat that will hit that cheesecake sweet spot.

You can refrigerate these for a party later in the day. I would eat them the same day that I make them because the graham crackers will get soggy.

Cherry Cheesecake Bites Recipe

Makes 20 cherry bites

Ingredients

20 fresh cherries
¼ cup whipped cream cheese
¼ cup powdered sugar
4 graham crackers

Instructions

Wash cherries and put them in a small bowl. Mix cream cheese and powdered sugar together until mixture forms a paste. Place graham crackers in a plastic bag and crush with the back of a wooden spoon. Put cracker crumbs in another small bowl.

One cherry at a time, dip cherry into cream cheese mixture and then graham cracker crumbs. Place on plate or baking sheet and refrigerate until ready to eat or eat immediately.

This sounds great! If you pit the cherries first, then you can just pop the whole thing in. I bought the most amazing 4 hole cherry pitter this year. It works great and is an amazing time saver.

however, you can do sane cheesecake. after going through many recipes lately and not finding anything sane calorie wise, i took the rist and created my own recipe, made of 3 cups of 3percent fat, 3 eggs, lots of lemon and lemon rind, a little melted butter and some flour using those crumbs one does for apple pie for the bottom. it came out just great. next time i will seperate the yolks and whip the eggwhites and use less flour. there is really no need to put so much fatty stuff in a cheese cake, although they might be somewhat better.

Just picked up some cherries at the farm market, so will be giving this one a try. Cute and fun, and I bet satisfying for a quick summer 'gotta-have-cheesecake' urge!

We bought cherries this week, as they were on sale. Not sure that I'd ever had them "fresh & real" before. So yummy they don't even need anything else, although this is a cute idea!

I love this idea! I like cherries but I like strawberries better, so I may also try stuffing them with a dab of cheese and crumbs on top. Cheesecake is one of my very favorite desserts!

Love your alternative for all classic recipes! This is absolutelty amazing. I just wonder, what do you think about replacing whipped cream cheese to low-fat Greek yogurt? And normal sugar to stewia or erythritol? Then we could serve it even for people who suffer from diabetes.

Ive made a low fat cheese cake so simple with low fat cream cheese,Elmlee cream and low sugar or low fat digestives and it came out really well.I think the cherry cheese cake bits would be ideal for a party though

Great idea! This works well with a dollop of low sugar jam too. Some are just full of fruit so this would work great following the recipe here. If you must use fat free cream cheese, it is delicious for use in a cheesecake. There is really no difference in taste. I have made wonderful cheesecakes using full fat and low fat cheesecake and there is really no difference. Both are delicious. We found that in using full fatted ingredients that they are vastly more satisfying. We use butter and coconut oil instead of margarine and still maintain our weight and have even lost weight. Portion control is so easy this way because we don't have to keep eating, eating, eating to feel satisfied.

ABSOLUTELY BRILLIANT!!! The only problem I see is I would then have to get the unused cream cheese and graham crackers OUT of the house! :)

I've been using what Kraft markets as 1/3 less fat cream cheese which is actually Neufchatel cheese for years. We prefer it because it spreads easier straight from the fridge and has a little less tang than regular cream cheese. It makes wonderful cheesecakes. No one ever knows the difference.

I really like the strawberry suggestion, as cherries aren't that high on my list, either...even sweet ones.

ha ha, absolutely agree with you. May be that "cheesecake like" cheesecake is not a cheesecake anymore

Absolutely brilliant idea, so quick, easy, and delicious!! I would just use pitted cherries if making them for anyone else but myself, just to reduce risk of broken teeth. I wonder why no one has ever thought of these before???
