Meet Mini Mac and Cheese Bites: The Best Way to Enjoy Pasta

January 15, 2015   12 Comments

Macaroni and cheese is one of those foods that is so good that it’s bad.

Mini Mac and Cheese

I know a lot about mac and cheese because my son loves it more than anything. He demands it at all times of day (yes, breakfast too) and I am a bit tired of making it.

Also, I am not a fan because I have trouble with the amount that I eat if it is around the house. A friend of mine told me about a party where she had a “mini mac and cheese bite” and I thought – DING! – this could work for me!

It is super easy to make this in a mini muffin pan and then you can ensure your portion is in the right ball park.

Eat this for a snack or serve as a fun appetizer. A couple of them make a great meal!

What perfect morsels of joy. Truly.

These cute little mini mac and cheese bites sound delicious - can't wait to try them! Thanks Lisa!

Nice. Sharing with my fat loss clients because they need a healthy alternative for their kids AND they need a portion controlled amount for them. Thanks!

What an awesome idea! I love mac and cheese but don't make it because of it's temptation. Thanks for sharing.

Boy, sounds GREAT. Gonna try them tonight!!

super idea and I'm sure so flavorful with the Dijon & garlic! also versatile since you could amp up veggies if desired (nothing yummier than cheese and brocolli). Great portion control and so easy to pop into a lunchbox! Thanks.

Can these be frozen? It'd be ideal if they can.

I've made the recipe before, but I never put them in little mini muffin tins. How cute!

I love cheese, and I really love mac and cheese but like I don't have any self control so these are brilliant! Can't wait to try this recipe.

Yay! What a great idea...of course I just might keep popping the whole pan full! Absolutely NO self control when it comes to Mac & Cheese! Okay...just won't make 'em everyday!

These things are really cute perfect for me being I'm the only one in my house that eats mac and cheese

Do you have to use whole wheat pasta - I am NOT a fan but the rest of the ingredients are a go for sure with plain macaroni.
