Mini Ice Cream Sandwiches for Keeping Cool

Let’s all do a swan dive right into ice cream season! Weeee!

Pretzel Ice Cream Sandwiches

It is FINALLY heating up and it is hard not to want a cold, creamy dessert. My children have a habit of asking for ice cream every hour on the hour.

My very favorite ice cream spot is a 20 minute drive away, and I look forward to dropping by and standing in line with a million other people who also love it. The wait forces me to think about which flavor I want and savor the experience of eating it. You don’t want ice cream to be fast food.

These little sandwiches also slow you down. First, you have to take the time to make them, and second, you have to let them freeze.

I find these deeply satisfying because they hit a salty, crunchy, creamy, sweet place. They are also fun to make with kids and store well for those ice cream emergencies.

It is important to only make about 12 at a time (1/2 cup of ice cream) because they start to melt fairly quickly. You don’t want soggy sandwiches (yuck!).

True confession – I did not take the photo. The pretzel maker, Snyder’s of Hanover, sent me the photo. I did, however, make the sandwiches to ensure that they were as good as the photo suggests.

Pretzel Ice Cream Sandwiches Recipe

Makes 12 sandwiches, 3 per serving

Ingredients

½ cup slow churned vanilla bean ice cream
24 square butter pretzels
sprinkles (optional)

Instructions

Line a baking sheet with parchment paper. Spread about 1 teaspoon of softened ice cream onto a square pretzel. Squish another pretzel onto ice cream, dip into sprinkles, and place on baking sheet. Freeze and enjoy in 20 minutes or store for later.

Those pretzel ice cream sandwiches look wonderful and so festive for 4th of July! Definitely will try! I have made them with graham crackers regular or chocolate. Always a nice treat already made and waiting in the freezer!

They are cute but I'm not taking the time to make ice cream sandwiches out of pretzels. Good idea but just don't have the time to mess with that.

What a cool idea...literally! I would think that making 12 sandwiches doesn't take all that long.

I do worry about the melting factor (ice cream leaking through the pretzels), but I definitely will try this this summer.

And the graham cracker idea someone suggested sounds yummy as well.

These are so cute! They look yummy, too. I am not sure I would actually make them, but I might get some pretzels and dip them in a little cup of ice cream to get the sweet, salty flavor, though.

You can use cool whip and it will taste just as good...

I find slow-churned ice cream hard to work with in desserts. It's just not very substantial and melts to nothing easily; real ice cream will make a nicer sandwich. Of course, with more calories. I also prefer a cookie on the outside, oatmeal is my fave :-)

Sorry but with only using a teaspoon of ice cream,i'd be eating all of them.

Just made some and they are great! A little messy but tasty! Will be nice to pop a few for a quick treat!

Ok...I know alot of ppl HATE whipped topping but use cool whip in place of ice cream and freeze for a VERY low cal treat!!

So, fess up, did your ice cream sandwiches look as good as the one's in the picture? I know mine didn't... he, he... but still yummy!

These were delicious and fun to make. Children love them, too! The salty and sweet...yum. Making them was very easy...make them and freeze individually, then pop in a bag. I used a lo fat, no sugar added ice cream.will be a great project for children to do.
