The Winner of the Skinny Chef Cookbook is Karis! (via random selection) I asked about low cal substitutes for comfort foods and everyone had SUCH great ideas. Thanks for sharing.

Here is Karis's low calorie comfort food:

So, I have a serious affection for chocolate and peanut butter, which I used to satisfy with either peanut butter M&M's or Reese's Cups... ruh roh!! BUT in my quest to satify my craving, I came up with a treat that I actually crave more than the candy!

Toast either a Whole wheat waffle OR Whole wheat light english muffin in the over or toaster oven. Just before it is finished, take 8-10 70% or higher chocolate chips and place on top. Leave in oven for only a couple more minutes. Pull it out and take 1.5 T of NATURAL peanut butter on top and your are DONE!

The meltiness of the chocolate and peanut butter with the crispiness of the waffle or english muffin is AMAZING! The key is to use the darker chocolate so you have more cocoa flavor. YUMMY!!!!!!!

Here are some healthy snack ideas ~ Veggies hmuums like raw carrot sticks, cucumber slices or sticks, cherry tomatoes sliced, lightly steamed broccoli, slices of bell pepper, celery sticks, etc. If you want you can slice whole wheat pita into triangles for dipping or dip pita chips in the hmuums. ~ Greek yogurt or regular yogurt ~ Berries/Fruit ~ Fruit/berries + greek yogurt~ Nuts, seeds or trail mix ~ Cottage cheese + fruit/berries ~ Hard boiled egg + cottage cheese, greek yogurt or almonds~ Whole grain crackers with cheese or hmuums ~ Whole grain crackers with cheese grapes ~ All natural popcorn, natural sweet potato chips, pita chips with hmuums, etc. ~ Healthy cereal (such as Kashi or Nature's Path Organic; high fiber not to high in sugar) ~ Small whole grain tortilla with nut butter natural jam or sliced banana~ Plain greek yogurt with berries/fruit drizzle of honey, agave, natural jam for sweetness~ Kashi granola bar, Kind fruit nut bar, Lara bar natural healthy snack bars ~ Buckwheat waffle or pancake with toppings like cream cheese, natural jam, honey, cinnamon, agave nectar, berries/fruit, nonfat yogurt/greek yogurt ~ Fruit salad; try different combinations like:- Strawberries, kiwi- Watermelon, grapes, strawberries- Banana, mango, pineapple- Watermelon, honeydew melon, pineapple- Raspberries, blueberries, strawberries, blackberries- Apple or pear, strawberries~ Homemade smoothie: using fruit/berries of your choice with skim milk or non-dairy milk with nonfat yogurt, you can also add 1-2 tbsp ground flax seed.
