I have been getting into chia seeds. One reason for my infatuation is that I found them at Aldi for $3. Hurray!

Also, they are incredible nutritious – high in manganese, omega-3 fatty acids, fiber, protein, etc. – AND (the best part) they make food gelatinous.

They thicken anything you put them in and so they make great pudding - chocolate pudding with chia seeds and jam.

This is ridiculously easy in a blender and then you simply store for 90 minutes in the refrigerator and it turns magically into a thick fruit spread.

Put it in your yogurt, on your toast, or just eat it as a treat! Yum!

Strawberry Chia Refrigerator Jam

Makes 8 ounces

½ cup pitted dates
¼ cup water
2 cups frozen strawberries, thawed
2 tablespoons chia seeds

Blend dates and water until dates are chopped. Add 1 cup strawberries and puree. Add second cup and chia seeds and pulse a few times to ensure you still have some chunks of strawberry. Put in refrigerator for 90 minutes and enjoy! This will keep in your refrigerator for one week.

One tablespoon is 30 calories, 0.6 g fat, 0.0 g saturated fat, 5.9 g carbohydrates, 4.7 g sugar, 0.5 g protein, 1.5 g fiber, 6 mg sodium, 1 SmartPts

The dates are likely to be partially dried, so they do count on WW and the points count is quite high.

I would add smashed banana instead of dates for Weight Watchers friendly.

Unfortunately, 1/2 cup of dates are 13 smart points and 2 tbsp if Chia seeds are 3 smart points. I'm actually quite shocked at the chia seeds. They are such a great source of protein, yet their smart points values jump quite quickly. This is actually a 16 smart point for the whole recipe, or based on your nutrition breakdown 1 pt for 1 tablespoon. I used the WW app to figure out the points.

This is one recipe I will make today. So 1 point for tablespoon isn't so bad to spread on a slice of toast or to stir into my greek yogurt. I'm guessing this would be diabetic friendly then???

Thank you for all the help with the new WW SmartPoints. I have changed the recipe to reflect 1 SP for 1 tablespoon - which I think is still pretty good compared to commercial jam. With no added sugar and only about 5 grams of fruit sugar - this seems to me to be a healthier choice.

It also tastes really good!!

I am not WW savvy but, from reading comments on the high smart pts of dried fruit [like dates], I wonder if 1 Tbsp. honey would be significantly lower than half cup of dates. Here's why: recently I needed some sweetened strawberries [to top belgian waffles] for an overnight guest's breakfast. All I had on-hand was a one pound bag of frozen organic strawberries. So after a little googling I decided to experiment with a healthy-sounding method of macerating fresh strawberries even tho mine were frozen. So happy to report the berries came out surprisingly sweet and syrupy as for a traditional strawberry shortcake consistency!. After oohs & ahhhs I made sure to file the following recipe: 1 pound strawberries, 1 Tbsp honey, 1 Tbsp balsamic vinegar. Let sit to macerate on counter to room temperature. If honey and balsamic vinegar created such sweetness might it work for strawberry chia jam as well? I hope it can do so AND reduce WW pts for you all. :)

I hadn't thought of making a simple jam with chia seeds.

Think I'd try the suggested mashed bananas because of the points value of dates.

Any other low SP chia seed recipes out there??

Anyone tried chia seeds to thicken a savory dish, like a soup or sauce??

Great recipe! I stirred up the version with 1T honey and 1T fig pear balsamic vinegar. Looking for chia when I found my friend's homemade vanilla. Add 1T. Macerating now, but I ate one cherry (had no strawberries) and it was INCREDIBLE. Might just eat these solo. Thanks all!

Thank you for posting this jam recipe! I am SO excited to have an alternative jam for my Son's peanut butter and jam sandwiches! He is so picky and always notices when I change to low sugar jam, but this one with the dates is genius!

I'm not familiar with WW smart points but it sounds like dried fruit has more points. If this is true, I'd use fresh ones. I get them at Kroger. You can fill a plastic bag with as much or little as you like: they are sold by the pound. $4.99 per pound (but, of course you don't have to buy in pound increments.

Why not Museli, the Swiss oatmeal instead of granola. Make it up, rolled oats,milk,yogurt (plain} a few dried fruits, nuts. Lots of recipes on the net and you keep it in the fridge for a few days. Double yummy!
