I added this recipe to my arsenal last year and it is a hit!

Whole Roast Cauliflower

I think the photo is what got people to give it a try and I hope it inspired people to eat more cauliflower.

Someone complained about me pushing cauliflower all the time (they root-a-toot-toot when they eat it), but I am not going to stop.

Cauliflower is low in calories big on nutrients and it’s a perfect vehicle for big flavors (since it is so bland).

How simple, no? - a whole cauliflower (no chopping) - smear on some marinade and you roast it. Doesn’t it look like something kinda “meaty”? I do think it looks spectacular.

This made a great side and I chopped it up the next day and tossed it in a salad (super yum).

One serving from this recipe has 8% of your daily value of calcium, 9% of your daily value of iron, and 77% of your daily value of vitamin C per serving. It is low in calories and healthy.

Spicy Roasted Whole Cauliflower Recipe

Ingredients

1 head cauliflower
1 ½ cups plain Greek Yogurt (0% or 2%)
1 lime, juiced
2 tablespoons chili powder
1 tablespoon cumin
1 teaspoon curry powder
½ teaspoon salt

Instructions

Preheat oven to 400F. Line a rimmed baking sheet with aluminum foil. Trim the base of the cauliflower removing the leaves and cutting out the woody stem.

In a large bowl, mix yogurt, lime juice, chili powder, cumin, curry powder, and salt. Dip the cauliflower into the bowl and smear the marinade on with a spoon or your hands. It should be well coated.

Place the cauliflower on the baking sheet and roast until surface is brown about 40 minutes.

Both of my adult boys and their wives are vegetarians; my wife and I are not. Makes for some extra thinking when they can come for a meal or just an evening and I need to put out some munchies. They also eat pretty healthy in other ways, too.

My local store also has a variety of other colors of cauliflower-purple, orange, green,- so that might add some fun to the dish.

I made this when it was published before and it looked wonderful. The spices were a little too strong for my taste but I would make it again with some adjustments to the type and amount of spices. Thank you for your encouragement and great recipe ideas!

Any suggestions on what do use instead of yogurt? I have a hard time digesting yogurt.

It looks like a brain! Be a fun dish for Halloween. Especially with the purple or green ones. Brainsssssss

Do you think any yogurt would work here? I don't eat dairy and if soy or another vegan yogurt would work, I would love to try it!

Will definitely be trying this recipe, looks delicious. Have recently started making pizza "crust" with cauliflower and LOVED it's taste and flavor; such a versatile vegetable!

I deep fried cauliflower or roast cauliflower, all are delicious. But I always cut it into small florets, roasting a whole cauliflower, it is interesting and looks so special and yummy. I have to try this. :)

I tried this & no one in the family liked it. We use lots of spices in cooking so this intrigued me. Prefer it broken into florets, with a little olive oil, sea salt & ground pepper.

I'm going to give this a try. I love cauliflower and usually slice it into planks and roast. When I was a kid, the only way my mom fixed cauliflower was to fry it or boil/steam and add cheese sauce. I'm always looking for ways to cook vegetables that are low calorie (or points). I will probably cut down on the spices as we prefer mild heat.
