Roast The Whole Perfect Cauliflower

Whole Roasted Cauliflower

Both of my kids have taken up the sport of soccer so even the weekends have become a race to the finish line. My son is averaging 2 games a weekend and my daughter is playing one. I am the definition of the soccer mom (except that I don’t drive a mini-van).

I saw this cauliflower recipe on Mind Body Green and I HAD to try it.

How simple, no? - a whole cauliflower (no chopping) - smear on some marinade and you roast it. Doesn’t it look like something kinda “meaty”? I do think it looks spectacular.

This made a great side and I chopped it up the next day and tossed it in a salad (super yum).

One serving from this recipe has 8% of your daily value of calcium, 9% of your daily value of iron, and 77% of your daily value of vitamin C per serving. It is low in calories and healthy.

Spicy Roasted Whole Cauliflower Recipe

Ingredients

1 head cauliflower
1 ½ cups plain Greek Yogurt (0% or 2%)
1 lime, juiced
2 tablespoons chili powder
1 tablespoon cumin
1 teaspoon curry powder
½ teaspoon salt

Instructions

Preheat oven to 400F. Line a rimmed baking sheet with aluminum foil. Trim the base of the cauliflower removing the leaves and cutting out the woody stem.

In a large bowl, mix yogurt, lime juice, chili powder, cumin, curry powder, and salt. Dip the cauliflower into the bowl and smear the marinade on with a spoon or your hands. It should be well coated.

Place the cauliflower on the baking sheet and roast until surface is brown about 40 minutes.

I ♡ cauliflower, but am not a fan of those particular spices. Any suggestions for other spices to use?

I saw this once and tried it and loved it: slice cauliflowers into thick "steaks" and cook outside on the grill, alongside whatever you're grilling that day. Super easy to cook on the grill, quick & very good, also. Just spray with a little EVOO or canola oil, add s&p, garlic salt, or whatever you prefer. Very quick and easy side dish. We usually season it with whatever is going on our meat (grill seasoning, etc.) Love the idea of roasting a whole head, though - especially when it's not grilling weather outside. :)

Marlene-yes! I actually sent this recipe idea to my son who is a neuroscientist, :) Haven't tried it yet myself but it looks very tasty AND simple. Thanks Lisa for the idea to toss the leftover cauliflower in a salad the next day! Cooking for one = lots of leftovers which I try to use up by creating a whole new dish--nothing novel I realize, still I love salads because they are the perfect starting point for many a thrifty meal. My latest brainstorm is to take a slice or 2 of leftover pizza, heat it up in a dry skillet, then toss it over a nice bed of mixed greens, chopped up as for a panzanella salad, add a few kalamata olives, pickled artichokes, roasted peppers, garbanzos, ital. seasoning, a touch of oil & red wine vinegar = quick, sumptuous dinner! Sorry I get a little carried away when you spark an idea! :)

Great way to use this vegetable. i will try it very, very soon. another way to use cauliflower is cutting into wedges, and use tempura to dunk them in and then fry in deep fry, delicious but not as diet friendly. (for tempura: a dish with one cup of water, half a cup of flour, mix well and add an egg, mix and add some salt if you wish)

Hi Lisa, I bake a whole cauliflower over the coals wrapped in tinfoil when we 'braai' (barbecue). I season it with some curry spices or chilli flakes, salt and pepper, a sprinkle of olive oil or a bit of butter, and it's delicious! The recipe is on my blog...love this idea, and will definitely make it! Thank you.

This is a GREAT idea. Easy to make it your own by doing any spices you like. I think I will try mixing plain coconut yogurt and balsamic vinegar as hubby does not like curry. Can't wait to go shopping.

Just roasted a head of cauliflower….modified spices a bit as I am not a curry fan….but it is really good! (I had to taste test as I took it out of the oven...

Wow, roast a whole head of cauliflower! You don't say! Will try this! I've tried roasting smaller pieces of cauliflower with cumin, cinnamon, garlic powder, cayenne, salt and pepper and it was pretty tasty too!

I tried this today and it was incredible - I used regular non fat plain yogurt as I had no greek -- but it was great -- thank you for posting this!

Is there an alternative to yoghurt? I always find the recipes look exciting then I see "yoghurt" or "Greek yoghurt" and I get depressed and have to move on. Sigh, I'm allergic to anything dairy and her in my country they don't bring in non dairy yoghurts. This cauliflour recipe look like what I'm looking for as an alternative to my available choices - except for the yoghurt. Any ideas?
