Waffle Iron Potato Cakes: Turn the Oven Off

May 22, 2023   12 Comments

Waffle iron potato cakes are a replacement for baking. You don’t need a hot oven right now.

Waffle Iron Potato Cakes: Turn the Oven Off

A couple of nights ago I was cooking dinner and my husband told me not to turn on the oven. It was 90 F outside so I understood his point.

This is the time of year that turning on the oven just seems counterproductive. We ate cold (cooked) chicken and felt good about ourselves.

These waffle iron potato cakes allow you to “bake” without the oven! Try my waffle iron apple or savory corn meal waffles for other hot weather baking ideas.

The only ingredients are eggs and shredded potatoes. You can shred your own with a box grater or the grating attachment of your food processor.

If you are super lazy (like me), you can buy frozen hash browns. I managed to find some inexpensive ones at Whole Foods

You want to look for ones with nothing added. You don’t need oil or salt to make these waffle cakes. These are shredded potatoes that have been grated for your convenience.

I believe that if convenience foods such as frozen shredded potatoes or pre-cut butternut squash help you with a healthier diet - why not? I’m not grinding my own wheat or keeping bees for my honey!

What I am saying is plenty of the ingredients we use is already processed in some way before we use it. The question is what kind of processing keeps the nutrients in the food intact. Freezing is a gold standard for keeping food fresh when stored.

I am always cruising the freezer section for healthy foods that I can store for those times when I can’t make it to the store.

I have frozen peas, spinach, corn always in my freezer.

Would you try a waffle iron potato cake? Do you cook with your waffle iron?

Trader Joe's has oil free shredded potatoes. I make them without eggs, just heat waffle iron add potatoes that I mixed with mushroom seasoning also from TJ. A quick and cooler way then using oven.

Sue, yes I do the same thing since going plant based 3yrs ago. I use varied seasonings but haven't tried mushroom. What is that exactly, I'm not familiar, but it sounds perfect.

Snackgirl, great reminder for hot days' yummy recipes. thanks!

Oh, what a great idea! I'll try with sweet potatoes. I love Snack-girl waffled apples!

I have waffled meatballs, ground sausage, mini fruit muffins and ... well... Now it will be potato cakes! Thank you!

I got rid of my waffle iron, but recently saw a recipe using it for tofu. Now this potato recipe. I may need to reconsider purchasing another.

Great with a little garlic powder and onion powder sprinkled on prior to cooking, too!

Great idea for the summer. My favorite Sunday morning breakfast is hashbrowns (from frozen) with two soft eggs on top. I season the hashbrowns with Everything but the Bagel seasoning. Going to try this seasoning in the waffles.

This sounds yummy, couldn’t it be done as a pancake....cutting time of cooking back?

I think cold chicken and Waffle Iron Potatoes sounds like a good dinner on a hot summer day! I have leftover chicken legs in the fridge and I can cook shredded potatoes in my waffle iron. Thank you for mentioning your cold chicken dinner and for this recipe!

What a great idea!!!

Thank you so much for all the time and effort you put into these posts. I have a similar business and I really appreciate the effort that it takes. God bless you. I will try your new idea.

I have tried this and yum. I added Everything Bagel seasoning. Thanks for the idea.
