Mini Mac and Cheese Bites

Makes 24 bites

4 ounces whole wheat macaroni
¼ pound frozen cauliflower florets, diced
2 eggs
1 cup shredded sharp cheddar cheese
2/3 cup milk
1 garlic clove, minced
1 teaspoon Dijon mustard
salt to taste

Cook macaroni to al dente using package directions. Heat oven to 350 and spray a 24 well mini-muffin tin with non-stick spray. Mix together macaroni, cauliflower, eggs, cheese, milk, garlic, and mustard and salt liberally.

Spoon into wells and bake for 15 minutes until bite has firmed. Serve immediately or store in muffin tin and heat up for perfect consumpition.
