
Roasted Vegetable Tacos Recipe
Makes 10 tacos

Ingredients
1 head cauliflower, cut into small florets
1 large sweet potato, chopped into 1/2 inch cubes
1 tablespoon extra-virgin olive oil
2 teaspoons chili powder
1 teaspoon ground cumin
1 teaspoon smoked paprika
1/2 teaspoon garlic powder
1/2 teaspoon oregano
1/2 teaspoon salt
1 lime, juiced
1 14.5 ounce can black beans, drained and rinsed
Instructions
Heat oven to 425 F and line rimmed baking sheets with parchment paper (for easy clean-up). Mix cauliflower, sweet potato, olive oil, chili powder, cumin, smoked paprika, garlic powder, oregano, and salt in a large bowl. Squeeze lime over the vegetables and spread them in a single layer on the prepared baking sheet. Roast for 20 minutes and add black beans (to heat them up). Roast for another five minutes.
Serve in a corn tortilla with salsa.
