Fiesta Dip Recipe
Makes 10 – ½ cup servings
1-16 ounce bag of frozen corn
1-16 ounce container of fresh salsa
1 cup grated pepper jack cheese
1 chopped scallion (optional)
Thaw corn via package directions. Mix corn and salsa in a small bowl and spread into a 9 –inch pie plate or other type of serving dish that is relatively flat. Top with grated cheese and heat in the microwave on high for 2 minutes until cheese is melted.
Top with scallion bits and serve.
