Summer is time when the best produce shows up and I can’t wait to get my hands on it.
It is also the time that you don't want to cook inside or do very much because it is so hot!
Once you have purchased the most beautiful and freshest produce, what should you do with it? I went to my local Shaw’s and bought a copy of Cooking Light. It is one of my favorite cooking magazines because it has gorgeous photos, uses seasonal ingredients, and includes the nutritional facts at the end of the recipes.
After work, I love to take some “Me Time” and peruse the latest advice and recipes in order to find something innovative to do with the tomatoes, peaches, strawberries, and blueberries that I have at home. I love flipping through the pages and dreaming about all of the healthy, fresh food that I could make and share with my family.
June’s Cooking Light magazine featured a beautiful appetizer with a flatbread, tomatoes, and peaches. It caught my eye because it only had a hands-on time of 16 minutes so I could spend more time relaxing instead of cooking. Also, I could use the grill instead of cooking indoors and heating up the house.
I find it relaxing to make something that we haven't tried before because I enjoy working with new ingredients and concepts. I had never tried grilling naan or combining peaches or tomatoes in the same recipe.
The charred flat bread was so tasty with the peaches and tomatoes and the spiciness of the basil and oregano. My children thought I was a genius when they tried it.
I got some more “me time” when I savored it with my husband and a glass of white wine and sent them outside to play in the yard.
