Do you know how to cook asparagus in the oven? This is the easiest time of year to be a blogger if you are into healthy eating because spring is coming!

How to Cook Asparagus in the Oven

As I walk into the produce section, all my favorites are less expensive and fresher than any other time of year. Yes, I am a fan of asparagus and I make my entire family eat it.

I pretty much eat roasted broccoli and crunchy cauliflower all year because I can find these vegetables at a decent price but asparagus is different.

The price of asparagus is related to when it is in season in the USA and all of a sudden it is everywhere.

My favorite way of cooking asparagus is to roast it in the oven because it turns out sweet. Also, I don’t have to watch it as I do other important things like chase the dog so I can get my shoe back.

There is nothing to fear about buying or cooking asparagus. A few tips:

  • Look for the thicker stalks - most chefs think they taste better
  • Use them the day you buy them - aging them in your fridge is not a good idea
  • Do not boil them - yuck!

All you have to do is snap off the blunt ends, toss them on a rimmed baking sheet with some olive oil, salt, and pepper and wait 15 minutes.

You can wrap asparagus in ham or prosciutto if you have it around for a nice party snack.

I add grated Parmesan cheese (just a little) to add a salty and cheesy element to the asparagus. Below, I have added a link to my favorite grater - having awesome tools makes cooking so much more fun.

Or skip the cheese and squeeze fresh lemon juice over the stalks.

If you have time, roast a couple bunches of asparagus and then keep it in your fridge for (you guessed it) snacking. Add them to salads or omelets to get more vegetables into your diet.

My kids eat these because we call them "trees" and they pretend they are dinosaurs. Hey - whatever works!

Ingredients

1 bunch asparagus (approximately 1 pound)
1 tablespoon olive oil
salt and pepper to taste
grated parmesan cheese (optional)
lemon wedges (optional)

Instructions

Preheat oven to 400F. Line a rimmed baking sheet with aluminum foil (for easy clean-up). Snap the blunt ends of the asparagus and toss it with the olive oil, salt, and pepper. Cook for 15 minutes (or until desired tenderness). Add parmesan cheese or lemon wedges and serve immediately. OR store in fridge for up to a week.

My favorite way to cook asparagus.

We grow it in our garden and love it! It comes back every year. So yummy and fun to see it grow and harvest it ourselves. Takes some commitment to get it going but so worth it. Best way to store it is in a big cup/dish of shallow water in your fridge. Give the stalks a fresh cut on the bottom when you bring them home, and immediately stand them up in a cup of water to store it so just the bottom ends are submerged. No need to cover it. You can change the water every few days if you need to keep it longer. Be sure to eat the ones that look less "perky" if you have a bunch to eat and plan to eat it off and on over a week or so. Should keep nicely for a few days (depending on how fresh it was when it hit the store), and will keep much better than in a plastic bag! When we cut ours from our garden it keeps for about a month that way. (Also another way we eat it... try snacking on it raw!) But our fave way is the exact way SG told us above - in the oven. Perfect every time.

I have never cooked it in the oven. We cook it on the grill. The recipe is pretty much the same though.

I buy only the thick ones - cover the tips with foil half-way through baking. In Germany, beautiful big asparagus is celebrated in April, green, purple and white!! Along with lovely small potatoes in butter! I buy asparagus at Costco occasionally during the off-months - depends on the size - the thin stocks are a no-no!

I toss asparagus with a little olive oil and a light sprinkle of Kirkland Pecorino Romano cheese. Cook in microwave a few minutes. Really good and fast.

I dress my roasted asparagus with a splash of very good quality balsamic vinegar. Can’t have it any other way now.

When it is on sale I will buy 4 or 5 bunches.....I snap off the bottoms, rinse them well, a put them on a micro safe platter and cook them four about 5 minutes( I want them bright green and crisp , not soggy) We usually eat them plain but a sprinkle of lemon pepper seasoning is good too. My grandkids all love them (age5-19).....if there are any left I refrigerate them....and eat them cold the next day.
