Quick & Easy Muesli Snack Muffins For A Morning Snack

This recipe is so fast that everyone in the house will be making these muffins for their morning snack.
I bought Nature Valley Toasted Oats Muesli Blueberry at my local Shaws store and it is a wonderful short-cut for making healthier muffins. Instead of having to pull out almonds, dried blueberries, and oats out of my cupboard - it is already pre-mixed!
These muffins use the sweetness of the dried fruit in the muesli with no extra sugar to make them too sweet. These a great healthy snack that will keep you going.
These pair great with coffee or tea for a mid-morning snack or an afterschool snack that your children could make on their own.
Muesli Snack Muffins
Makes 6 muffins
1 cup Nature Valley Toasted Oats Muesli Blueberry
½ cup whole wheat flour
½ cup milk
½ teaspoon cinnamon
½ teaspoon baking powder
Preheat oven to 350 F. Line a 6-cup muffin tin with liners or spray with non-stick spray. Mix muesli, flour, egg, milk, cinnamon, and baking powder with a fork and spoon into 6 muffin cups. Cups should be ¾ full. Bake for 15 minutes and enjoy!
