This is the time of year when everyone goes nuts trying to reboot. I am one of those crazies right now.

The meal plans include options:

  • For healthy, low carb, or vegetarian eaters
  • To customize number of servings you plan to cook
  • To choose the meals you need to make for the week

You can go with breakfast, lunch, dinner, and snacks or you can do what I did and make 4 dinners with 6 servings each. My family of four typically takes a serving of dinner to lunch so I frequently cook more dinner than we eat for leftovers.

If you don’t like a meal that Kristen has included – you can choose another recipe or add your own. You can also create your own meal plan from the large library of recipes she has created.

One Pan Lemon Garlic Chicken and Asparagus Recipe

Makes 4 servings

1.33 lbs. boneless skinless chicken breast tenderloins
2 tbsp. flour (or almond flour for Paleo/Whole30/low carb)
1 tsp. garlic powder
1/2 tsp. pepper
1/2 tsp. salt
1 lemon (zest and juice)
1 tbsp. olive oil
2 cups asparagus, chopped
2 cloves garlic, minced
1/2 cup low sodium chicken broth
1 tbsp. white wine vinegar

1. Combine the flour, garlic powder, lemon zest (save the juice), salt, and pepper. Toss the chicken with this until all the pieces are just coated.

2. Heat the olive over medium high heat. Add the chicken and cook on each side for 2-3 minutes until browned. Remove and set aside.

3. Add the asparagus and garlic to the skillet and cook for 2-3 minutes, stirring often

4. Add the chicken broth and vinegar to the skillet. Stir and scrape any browned bits off the bottom of the pan. Add the chicken and let simmer for 5-10 minutes on low heat or until chicken is fully cooked. Squeeze lemon juice over top.

Slender Kitchen has some wonderful recipes (include WW points). It is one of few my go-to websites for healthy food ideas. How would you rate the difficulty of the recipes and the needed ingredients? Are the ingredients easy to find?

Yes, DMM, the ingredients are pretty ordinary - once in awhile a strange chili, but I usually sub with something I'm familiar with. The ingredient list for each recipe is not very long and the cooking is pretty simple - nothing complicated. You can check out her recipes without the monthly plan subscription by looking in her search engine, or under general headings listed on her website. I've been cooking recipes from Slender Kitchen for about 5 years and just decided last year to jump in and do the meal planning. Hope this info helps!
