Waffle Iron Banana Bread

To say that I am a bit obsessed with my waffle iron is an understatement.

waffle iron banana bread

After a serious but brief deliberation, I have decided to give away my stove and microwave and keep my waffle iron. What am I doing with all of these appliances?

What I am finding intriguing is that I make small amounts of lovely food and it takes me only a few minutes. This way, I don’t end up with too much yummy food hanging around - for example an entire banana bread loaf. Also, I don’t have to wait an entire hour for something to bake so I cut my time in the kitchen. Win-win!

This recipe features a lower calorie banana bread. Instead of butter, I use buttermilk - which is flavorful but has much less saturated fat.

You make think this is simply a banana waffle - but it isn't. It is much more dense than a waffle (more like bread). I toasted this for breakfast, ate it like a cookie with coffee, and tossed it in my kid’s lunch box because it has no nuts.

These have an instant portion size (unlike when you slice banana bread and you can change the portion when no one is looking).

Have you tried to make banana bread in your waffle maker?

I want to try to make these gluten free as I have celiac. I will give it a whirl sometimes soon; your recipe sounds amazing.

Would this work well in a loaf pan or in muffin tins?

I bought the waffle maker you featured on another waffle recipe. It says not to use non-stick spray. Your thoughts, please.

Quick clarification - is one waffle for your calorie count = 1 of the 4 sections? Thanks! :)

You can do this in a muffin pan or loaf pan - it will take longer accordingly.

I have used my waffle without non-stick spray and it works. You can also rub it with a paper towel with some oil if you are worried. I think it will work without the spray.

It is 125 calories for one section of the 4 sections of the waffle.

Thanks for all of your questions!

My teenage daughter made these yesterday morning - excellent and the perfect size. My kids took the leftovers in their lunch box today. Thanks for the great idea!

I've made these several times now and they are fantastic. I add a tsp of cinnamon, a dash of nutmeg, and some diced pecans for even more flavor. It's a perfect way to use over-ripe bananas. Nutritious and delicious. Thank you!
