My daughter thinks these banana oatmeal peanut butter chocolate chip cookies should be called “bites” instead of cookies.

I know what she is saying because this recipe doesn’t use the creamed butter and sugar that you find in the regular definition of “cookie”. But, if you can convince yourself that this healthy alternative is an actual cookie - you are set!

I saw this recipe on WW and decided to give it a try. A member found that she ate these as a way to curb her sweet tooth and it was working. I crave sweets when I am tired and I thought these would be a great way to get energy.

I also love coffee and anything sweet that goes with a cup of coffee is a treat.

The main source of sugar for this recipe is the natural sugar found in bananas. I was surprised at how much mashed bananas mimic butter and sugar. Mashed bananas even sort of look like butter and sugar.

Instead of peanut butter, this recipe uses PB2. PB2 is powdered peanut butter - basically the stuff that is left over when the manufacturers extract peanut oil. PB2 is very low in calorie and it adds a nice flavor.

You can make these in one bowl and in no time at all.

They come out soft and will do well if you store them in an airtight container.

You can make these cookies for your gluten-free friends by ensuring that you use gluten-free oats. These cookies do not spread when you cook them and aren’t stuck together by sugar so you have to spoon them carefully.

After I scoop them onto the cookie sheet, I press them down a bit.

Ingredients

3 ripe bananas
1 1/2 cups old fashioned oats
1/3 cup PB2 or other powdered peanut butter
1/4 teaspoon salt
1/3 cup mini semisweet chocolate chips

Instructions

Heat oven to 350 F. Line a baking sheet with parchment paper. Mash bananas in a large bowl and mix in oats, PB2, salt, and chocolate chips. Using a tablespoon scoop batter onto the baking sheet. Flatten with the bottom of a cup a little bit and then bake for 20 minutes until oatmeal has browned. Eat warm or room temperature.

How can that be same number of points on purple as green and blue when oatmeal on purple is zero points. Just wondering.

I love them! Have made them several times, delicious for on-the-go breakfast with coffee or a little something sweet in the evening. They freeze well too, so I can have them in an instant.

Can one use regular pnut butter if P2 is not available?

I actually found these on WW too and made them last night. My son surprisingly described them as "good." I thought they tasted a little more like a glob of chocolate flavored oatmeal. But I added an egg to the recipe hoping they'd be a little more moist and hold together better. I think it may have made them too moist. I also used PB2 with cocoa and added a dash or too of Stevia, so these alterations may have ruined the cookies for me. Will try the basic recipe another time and see if I like them better. I too thought I had to convince myself quite a bit that these were "cookies."

I read the whole content and I don't see that my question was anwered other than P2 adds flavor. Specifically, can regular pnut butter be used instead of P2, and if so, how much.

I make these all the time; I use raisins instead. I make them with and without the PB2 butter; when I feel like PB2, I mix some up and top the cookies with the spread. Look forward to my breakfast everyday!

Yum, I whip up a quick batch and cut it by thirds when I have an over-ripe banana and cook them in the air fryer on a piece of parchment paper for about 5-7 minutes... quick and easy!

Yes I would try them. Never heard of PB2 but I will be looking for it.

Thank you Snack Girl.This is a very Healthy recipe. I would like to put some thing else in place of the chocolate? Because most of my cookies have chocolate in them. Any suggestions other than "nuts"? This seems like an easy to do recipe.

I usually just do the oat and banana too, but these sound really good, so I have to try them.

One question though, bananas vary so much in size, any idea how much 3 bananas would be once they are smashed? One cup? More?

This is my standard breakfast with coffee. I add grated carrots and chopped apples....extra fiber!

I've tried a similar recipe that includes above ingredients with the addition of 1/3 cup unsweetened applesauce, 1/3 cup unsweetened almond milk, tsp vanilla and cinnamon. So delicious and it inspires other fun variations that I can try like pumpkin

Is there a way to make these crispy?

I use my chopper and add raisins, apples and carrots...nothing else..these are all "free foods", except raisins, which I use sparingly. I freeze them and when I want one, I let it sit for a bit and toast them in toaster oven, sometimes I add pnut butter as a spread.....been doing this for years.!

A search on peanut's toxic nature will pull up many results. Most concur. Like most food items it just depends. As with bananas. Run a search. As with most Snack Girl she's is wrong to claim her recipes are good for us. Probably no worse than any one else.
