If you haven’t seen The Lego Movie then you don’t live with an 8 year old boy.

Chicken Tacos

I have seen the movie twice and I enjoyed it (I am not kidding). Taco Tuesday features prominently and I think most Americans enjoy their own “taco night” maybe even more than once a week.

Why? Tacos are easy, fast, and you can sneak all sorts of vegetables in there. I feature a recipe in my book – Healthy Tacos With A Twist – that I use a lot.

When you have time to plan, this recipe for slow cooker chicken taco filling is SO easy. The nice thing about it is that it combines corn and beans with the chicken so you get a “stew like” filling with many flavors.

Also, you sneak in some corn and beans with the chicken meat (which is very lean) so this is low in calories when compared to cooked ground beef.

This made enough for my family of four and then some. We froze over half of it for another night.

Slow Cooker Chicken, Bean, and Corn Filling For Tacos

Makes 24 tacos, 4 ounces (1/2 cup) of filling per taco

Ingredients

3 chicken breasts, skinless and boneless (about 2 pounds)
1 package taco seasoning or homemade taco seasoning (see below)
2 tablespoons minced garlic
2-15 ounce cans black beans, rinsed
1 pound frozen corn
16 ounces jarred or fresh salsa

Instructions

Place chicken in the bottom of a 6 quart slow cooker and sprinkle seasoning and garlic on top. Add the beans, corn, and salsa and cook for 6 hours on low or 3 hours on high.

After the filling has finished cooking, take two forks and shred the chicken. Serve with taco shells, chopped avocado, tomato, and lettuce.

Homemade Taco Seasoning - combine 2 teaspoons cumin, 1 tablespoon chili powder, a minced garlic clove, and 1/2 teaspoon of salt and use in place of packaged seasoning.

1 package of taco seasoning? Seriously? You say "When you have time to plan, this recipe for slow cooker chicken taco filling is SO easy". That time to plan should have included using regular old spices and not a package full of sodium and preservatives. I'm disappointed.

I saw the package of taco seasoning in the recipe and quickly said, nope, can't do it. That has waaay too much sodium. I would have preferred a recipe with spices too!

I LOVE this recipe!!! It has become a regular in our house. I found a recipe for homemade taco seasoning on AllRecipes.com. Which is great. BUT for those who use packaged Taco Seasoning- is a great choice as well. Garden Girl and Cathy being a bit harsh on those who may not have discovered or have the time to make their own taco seasoning. Snack Girl is giving busy people options to get a healthy meal with veggies on the table. Thank You Snack Girl!

Jackie Cooley I was going to say the same thing! Taco seasoning packets can be made at home, there are tons of recipes online. I like to use Mrs. Dash taco seasoning which doesn't have any salt (but does have sugar). To write off the entire recipe for that is silly. As a busy mom, I appreciate quick recipes with a minimum amount of ingredients. Sometimes a recipe with too many ingredients can turn me off, especially a lot of spices that I might not have and don't feel like measuring.

I don't think 173mg of sodium is all that bad for a 1/2 cup serving. With 1/2 cup I can usally make about 3 tacos as I skimp on the meat and fill add more of the lettuce , tomatoes and onions..Thats just my opinion..

There is a reduced sodium Taco Seasoning from McCormick available. We use it often but I never use a whole package at one time. For our family of 3 I use a 1/3, sometimes a little more of the seasoning packet and that provides for plenty of seasoning. It helps that I do tend to use other spices while browning the turkey meat. Turkey Tacos are one of my daughter's favorite meals. We use turkey meat with everything that calls for ground beef. Don't disregard a recipe just because of one ingredient, be creative & change it up for your family.

All this fuss over seasonings. I do the same thing by pouring some salsa over the meat when I out it in the crockpot. Same meal. Enjoy

Just wanted to say that I also loved the Lego movie!

The one time I comment on a board and it sort got out of hand! I apologize...didn't mean to start a stir!! Yes, of course I could make my own taco seasoning, but I see you have 'revised' the recipe and I will have to try it now for sure!!

I love this recipe - it is one of my all time favorites. I use 3 chicken breasts, salsa, 1 or 1.5 cups corn and one can of beans, rinsed. It is great. If I use a really large jar of salsa I end up with some good liquidy-stuff to start a batch of taco-type soup. The chicken freezes really well so I'll pre-portion and pop into freezer for later use. Thank you, thank you!

I use a local, fresh salsa and don't bother with extra taco seasoning, if we want it spicier I add a little extra cumin and chili powder or fresh jalepeno peppers. Terrific recipe, thank you!

I love how you're so flexible and take constructive criticism so well! That's why you're so good at what you do :) Thanks for that recipe for the taco seasoning - I usually try to make my own and don't always get the proportions correct.

Great recipe! Just tried it this weekend and it came out great - using Penzey's chicken taco spice blend. I will be making this again! (BTW, I used the crockpot on High and was very pleased that the vegetables were not mush and the chicken was very tender.)
