This chocolate chia pudding recipe is for those people who LOVE Jello pudding but need a healthier alternative.

Chocolate Chia Pudding Recipe

One tablespoon of chia seeds has more calcium than a glass of milk, more Omega-3s than Salmon, and more antioxidants than blueberries!! Take that Jello!

I think this is one of those wonderful sneaky recipes that can fool people into thinking it super decadent when it isn’t.

I decided to try chocolate pudding because who doesn’t like pudding? Chia seeds are great as a thickening agent so you don’t have to cook the milk to get the right pudding consistency.

Since I have started eating chia seeds, I read a wonderful book about running, Born to Run: A Hidden Tribe, Superathletes, and the Greatest Race the World Has Never Seen by Christopher McDougall (see below). In it, the Tarahumara Indians run 100’s of miles fueled on chia seeds (as well as corn and other foods).

I also love to use chia seeds in my overnight oatmeal with chia seeds as it makes the mixture thick and creamy.

You can find chia seeds in the natural foods section of your grocery store and they are not cheap - a small bag set me back $7. Any seed product is high in price because they are so hard to harvest. Think about them as an investment in your health.

When I first made this I did not have a powerful blender and it was a bit grainy. Now that I have a Blendtec (a Vitamix would also work), it comes out PERFECT and my teenagers eat it up. When I used the high power blender, it was instantly thick (no need to wait to eat it!)

Makes 4 – ¼ cup puddings

Ingredients

3 tablespoons cocoa powder
3 tablespoons brown sugar
¼ cup chia seeds
1 cup milk (whatever you like almond, soy, etc. – I used 2% cow’s milk)

Instructions

Blend cocoa powder, sugar, chia seeds, and milk in a blender for 5 minutes until chia seeds are pulverized. Pour into small ramekins and place in refrigerator.

Chill or eat at room temperature.

I know what chia seeds are. I never knew how nutritious and healthy they are. This chocolate pudding looks so thick, creamy, and dreamy. A bag of chia seeds might cost a bit of money but usually you are using small amounts at a time. I can’t wait to buy chia seeds and make delicious chocolate chia pudding!

I don't bother dirtying up a blender as I like the "tapioca" mouth feel of the

softened seeds ... I use some unsweetened vanilla almond milk and Chia seeds and let sit!

The above recipe reads good, but too much sugar for me. LOVE snack girl...

I have some chia seeds sitting in my pantry that I bought for something else, and now I know what I am going to do with it. I also have a block of unsweetened chocolate that I am going to grate and melt down for this. Also, I'm going to try using some monk fruit sweetener. Thanks!

Just made 3 pints last week and ordered more organic chia [Amazon, 2lbs for 6.87]. I use your recipe with Organic Silk Soy, and 3 whole dates for sweetener. I also add 1tsp vanilla. I deliver 1pt to my daughter's mailbox. My [work-at-home] son visits here alot due to covid so he got 1pt. OMGosh it's always so good in any weather and we need our Omega 3. I try to sprinkle some chia in smoothies, oatmeal, cooked berries for dessert or over a waffle or toast. Has anyone tried to thicken soup with these seeds? I might do that next!

Definitely not a low-cal treat at a standard serving size of 1/2 cup for pudding (188 cals and 8 Green, 8 Blue, 8 Purple, may be slightly different if run through the WW calculator). Not many people would eat only 1/4 cup.

Love a delicious snack I can whip up with ingredients at home! Rich and wonderful texture. I used unsweetened vanilla almond milk. Only change - because I have a strong sweet tooth - is I mixed in a half packet of Splenda per serving. 1/4 cup is enough of this rich treat...I will make again, thanks!

Hello, I haven't yet made this. I was wondering if the sugar count is to high or not.I'm trying to do better on eating alot of sweet things. I don't know how much sugar a day is good for you.

I use coconut sugar in place of white or brown sugar.

I make this using either 2 dried prunes or 1 date. Also use non dairy milk as I'm vegan. Think I'll make some today as it's been awhile.

Can you change the regular brown sugar to Truvia brown sugar blend? And if so does it change the WW points?

I have been grinding my chia seeds in my little coffee grinder, works like a charm. Have to do it in small batches, but better than buying one of those really expensive blenders. :-)

Also, Lisa, so funny you mention 'Born To Run', because I just started reading 'Eat & Run" by Scott Jurek (for the millionth time, love this book)...I think you would enjoy his book!

Can Splenda be used for the sugar? If so, how much please.

I finally purchased a bag of chia seeds and made this pudding! It is so good! I have an older blender. It’s a Hamilton Beach six speed blender. It had no trouble pulverizing the seeds down to a sandy texture. I doubled the recipe and spooned the pudding into 8 little glass jars that I purchased at the store. Right now I’m letting the pudding chill. I did lick the bowl and spoon I used to make the pudding and I loved it. It’s just a bit grainy but tastes heavenly! Overnight chia oatmeal next!
