This fast banana bread gets its speed from a waffle iron.
To say that I am a bit obsessed with my waffle iron is an understatement. I have made both an banana peanut butter waffle and a waffle potato bite.
After a serious but brief deliberation, I have decided to give away my stove and microwave and keep my waffle iron. What am I doing with all of these appliances?
What I like about my waffle iron is that I make small amounts of lovely food and it takes me only a few minutes. This way, I don’t end up with too much yummy food hanging around - for example an entire banana bread loaf.
Also, I don’t have to wait an entire hour for something to bake so I cut my time in the kitchen. Win-win!
I have gone through many waffle irons over the years and I find that the best ones are about $40. The $15 ones break way too easily and the $100 ones are unnecessarily expensive. There are a ton of reviews of waffle irons on Amazon so go pick your poison.
This recipe features a lower calorie banana bread. Instead of butter, I use buttermilk - which is flavorful but has much less saturated fat. I also use a mix of whole wheat flour and white flour to give it a whole grain boost.
This dough is really just banana bread!! But, it is much less batter than the average loaf.
You make think this is simply a banana waffle - but it isn't. It is much more dense than a waffle. I toasted this for breakfast, ate it like a cookie with coffee, and tossed it in my kid’s lunch box because it has no nuts (their school has a no-nut policy).
These have an instant portion size which makes it easier to stay in control if your consumption. Freeze some of these for a snack or quick breakfast on the run.

Waffle Iron Banana Bread
Makes 8 small waffle breads
Ingredients
1 egg
¼ cup sugar
2 mashed bananas
1/3 cup buttermilk
2 teaspoons vegetable oil
2 teaspoons vanilla extract
1 cup white whole wheat flour or ½ cup white flour and ½ cup whole wheat flour
1 teaspoon baking powder
¼ teaspoon baking soda
¼ teaspoon salt
Instructions
Spray a waffle iron with nonstick spray. Using a whisk or a fork beat eggs and sugar in a medium bowl. Add mashed bananas, buttermilk, vegetable oil, and vanilla and blend. Mix in flour, baking powder, baking soda, and salt until just blended.
Drop about ¼ cup of batter onto 4 sections of the waffle iron and cook for 4 minutes. Remove when firm. Enjoy immediately or refrigerate for later.
