I am freezing my tush in Massachusetts. We have had a frozen pipe, a dead car, and kids out of school. Woohoo! How do I deal with what winter has handed us? Coffee and hot chocolate! (I hate tea).

Here are two of my favorite recipes: Vegan Hot Chocolate and DIY Peppermint Mocha. They should put a smile on your face.

This instant hot chocolate mix came out of wanting something around in case we run out of milk. Also, I love INSTANT anything. What I do not love is packaged mix in little packets. First, they are messy. Second, they are bad for the environment. Finally, they don’t taste very much like hot chocolate.

I thought it would be fun to make my own and customize it to have MORE chocolate and LESS sugar.

This was the weather outside on the day when I decided to make this. My kids were home from school and were thrilled to be my official taste testers.

I did go outside in this weather to walk my dog because I am not cruel enough to send out my kids. My outfit was so ridiculous that I was hoping that none of my neighbors notice me walk on by. They would recognize my dog because he was just in his regular old hair.

I put on ski pants, ski jacket, goggles, ski gloves, and a pompom hat. I looked like I was going out on the next Apollo mission. The dog didn’t want to come home because he seemed to love 40 mile an hour wind gusts and being pummeled by snow.

I was glad that when I got back inside I made this INSTANT mix because I needed it. The dog sat by the door waiting for me to go back out (not gonna happen).

This recipe is really simple but there is a catch. Dry milk powder is a bit expensive. This does taste so much better than the package mixes so I think it is worth it.

Feel free to mix in mini marshmallows or a little cayenne pepper (or both) to customize it to your liking.

Homemade Instant Hot Chocolate Mix Recipe

Makes 4 ½ cups

Ingredients

1 ½ cups confectioner’s sugar
1 ½ cups unsweetened cocoa powder
1 ½ cups nonfat dry milk powder
1 teaspoon salt
2 teaspoons corn starch

Instructions

In a large bowl, mix sugar, cocoa powder, dry milk powder, salt and cornstarch. Store in a Mason jar or plastic container. When ready to use, shake the container, and add 1 tablespoon of mix for every two ounces of hot water or hot milk. Mix thoroughly in your cup. Four tablespoons of mix will make 8 ounces of cocoa.

I’m confused about measurement “1 tablespoon of mix for every ounce of hot water or hot milk. Four tablespoons of mix will make 8 ounces of cocoa.”

Is it 1 TBSP per oz??

Or 1 TBSP per 2 oz??

@Nancy - I am SO sorry. Clearly the cold has gotten my brain to freeze. It is one tablespoon for 2 ounces and I have fixed the recipe above. Thank you for your comment (and for helping me out)!

Just curious if you don’t add the milk powder to the recipe, can you just add to hot milk? I love your blog btw-you crack me up!

Thanks for the idea. I’m going to fiddle around and try this with vanilla almond milk. Kind of like your vegan hot chocolate. Just a dry mix of cocoa and a healthy sugar substitute, etc

I just made this mix and then made myself a cup of hot chocolate. The chocolate I used was a very dark chocolate that I purchased at an Amish grocery store- it is called "black cocoa". I also did not put in the confectioner's sugar, using instead stevia. It was very chocolate-y (?) and not as sugary. However, I think the next time I make this I will not put in as much salt- I could definetely taste the salt.

Hi, I don't usually post, but, seeing as how your cocoa is the Aldi's brand, I just wanted to say, regarding the comment about instant milk prices, the Aldi instant milk is delicious and priced well. I have used it for years. I live it compared to bottled skim milk. What I do though is measure 1/2 cup powder (instead of the 1/3 cup) to the 8 oz water. My family can't tell the difference, either if I use it to lighten something up.

Can you tell me why you put in cornstarch? Just wondering what the purpose of it is in this recipe.

@Brenda - it is used to thicken the hot cocoa a little. Please leave it out and it will be fine! Great question.

@Belinda - Thank you for your feedback on the recipe. The salt is to enhance the cocoa flavor and clearly it did not work for you. Sorry about that.

I think it makes 73 tablespoons. There are 2T in one ounce and 8 ounces (16T) in one cup. This recipe contains 4.5 cups plus 1T. 16X4.5=72. Plus 1T for the salt and cornstarch. Please post back how manuy smartpoints!

Dear Snack girl: Sorry you don't like tea! I make an English version of tea w/2 teabags (I use decaf) in a mug of heated water(microwave) and steep it about 2-3 minutes. I then used 2 pink pkgs and about 3/4 tspn creamer (can use liquid).It's strong, relatively dark & great for what ale's you! (ps-am 1/4 English).

I have made homemade hot cocoa mix with equal parts dry milk and cocoa powder. You can heat water or milk for your hot cocoa and use your choice of sweetener to taste!

A hundred years ago, my mom sent me off to college with a big tin of instant hot cocoa mix (a lot like this one). Turns out, it was actually a recipe for instant friendships!

@Carole Rosenthal - I am right there with you about tea. I am 0% English, but years ago as a waitress saw an Englishman make tea with two teabags. I've been drinking strong tea ever since. Red Rose is my go to. I like this hot chocolate with cocoa powder and almond milk. Thanks, Snack Girl, for this and also the vegan version. It tastes much better than packaged.

My daughter is diabetic, how would you use a sugar substitute for this, i.e., stevia, agave, etc?

This may be good but this is a lot of points. I don't know why anyone trying to lose weight would want to drink it

I am diabetic as well as working on losing some excess weight. I am trying to use as little sugar as possible. Mostly I use the Lakota brand sweeter but I have a full bag of swerve brand powder sugar. How do you think that would be? Or possibly half swerve and half regular powder sugar? Looking for a good instant hot chocolate but hate the stuff you get in package in the store. Thanks in advance.

I have to take a few issues with you on this post.

First the idea that it's less messy. Or that it is somehow better for the environment. Do you base that on the packaging of the products?

My mother's recipe, near instant, was whole milk, Hershey's coca and sugar.

The idea of adding cayenne to hot chocolate doesn't sound at all appealing but I may have to try it.

@Helene Albrecht--It calls for confectioner's sugar possibly because that will dissolve better than regular sugar? That's my guess, anyway.

I also use toasted sugar, gives a bit more flavor, and a bit of malted milk powder, and a dash of vanilla. You like coffee, and bit of instant espresso powder also enriches the taste.

I’m so excited to try this!!!! I just want to confirm, you’re using regular cocoa, not Dutch processed, correct?? Also, can it be made with cacao?
