Meet Mini Mac and Cheese Bites: The Best Way to Enjoy Pasta

Macaroni and cheese is one of those foods that is so good that it’s bad.

I know a lot about mac and cheese because my son loves it more than anything. He demands it at all times of day (yes, breakfast too) and I am a bit tired of making it.

Also, I am not a fan because I have trouble with the amount that I eat if it is around the house. A friend of mine told me about a party where she had a “mini mac and cheese bite” and I thought – DING! – this could work for me!

It is super easy to make this in a mini muffin pan and then you can ensure your portion is in the right ball park.

Eat this for a snack or serve as a fun appetizer. A couple of them make a great meal!

Mini Mac and Cheese Bites

Makes 24 bites

4 ounces whole wheat macaroni
¼ pound frozen cauliflower florets, diced
2 eggs
1 cup shredded sharp cheddar cheese
2/3 cup milk
1 garlic clove, minced
1 teaspoon Dijon mustard
salt to taste


Cook macaroni to al dente using package directions. Heat oven to 350 and spray a 24 well mini-muffin tin with non-stick spray. Mix together macaroni, cauliflower, eggs, cheese, milk, garlic, and mustard and salt liberally.

Spoon into wells and bake for 15 minutes until bite has firmed. Serve immediately or store in muffin tin and heat up for perfect consumpition.

Do you have to use whole wheat pasta - I am NOT a fan but the rest of the ingredients are a go for sure with plain macaroni.
