Oven Roasted Shrimp

Can you cook a delicious meal in five minutes? Oven roasted shrimp will change your mind on the definition of fast food.

If you didn’t have to heat your oven up to 400 F - this would be faster than any McDonald’s hamburger. Of course, this is much tastier (if you are a fan of shrimp which I definitely am).

Roasted shrimp is low in calories (112 calories for four ounces) and a cinch to cook. These little buggers are nutritious too!

Four ounces of cooked shrimp serves up nearly half the DHA and EPA — omega-3 fats — you should be getting every day. Omega-3s reduce blood pressure and triglycerides (fats in the blood) and are one of the only nutrients that raise good HDL cholesterol.

Of course, shrimp are high in cholesterol but (as we have talked about with eggs) the amount of cholesterol in your food does not impact your overall cholesterol numbers.

The only deal with shrimp is that it can be hard to know which ones to buy. Two rules:

1. Always buy frozen shrimp. The ones that are at the fish counter were frozen and are now thawing in front of you. Unless you are buying them off the boat - stick to frozen.

2. Try to buy shrimp that has been harvested or farmed in such a way that doesn’t ruin the environment.

This Aldi shrimp along with the shrimp that I bought from Whole Foods alerts me to the “Best Aquaculture Practices” certification for the shrimp. I believe, since many were not buying farmed shrimp from Indonesia and Thailand, pressure was put on the industry to clean up. You can now find plenty of sustainable choices in the shrimp department.

The Monterey Bay Aquarium puts out a great website – Seafood Watch - and they now have an app for determining which seafood is best from an environmental perspective.

This recipe is so easy that it is worth finding great shrimp! All you do is toss it on a pan with a little olive oil and roast for FIVE minutes. Done!

I may be mistaken, but I believe they are more flavorful when cooked with the shells on. We can argue below!

I serve them with a slice of lemon and I find that peeling them makes me savor them all the more.

Makes 3, four-ounce servings

Ingredients

12 ounces medium sized raw shrimp, thawed
1 teaspoon olive oil
salt and pepper to taste
lemon slices (optional)

Instructions

Heat oven to 400 F. Put shrimp on pan and drizzle with olive oil. Salt and pepper them and cook for 5 minutes or until pink. Serve hot with lemon squeezed over them.

Have never cooked shrimp in oven before but will give it a try. I live on the coast of Massachusetts and local fish store had frozen and thawed shrimp. Ok to buy thawed at a fish market?

Just cooked me up some shrimp even faster last night!

16 oz frozen shrimp in shells

Boiled 3 minutes

Drained and sprinkled with Old Bay Seasoning

Cocktail sauce on the side

3 WW points for 1/4 cup sauce (without sauce it's zero points!)

Roasting them with shell on seems to really maximize their flavor! I like a little slivered garlic sometimes too.

David - I think it's not that its not ok to buy thawed, just that it gives you less flexibility in using them. If you're buying to use right away, thawed is fine, but buying frozen just lets you keep them frozen til ready to use. That way you can be sure they were never held at the wrong temperature which can promote unhealthy conditions for bacteria...my two cents!

When Whole Foods has big, beautiful wild-caught, American shrimp on sale (which is fairly often) I buy extra and always ask the guys at the fish counter to get me some from the back that's still frozen. They're happy to do that. Whole Foods often has fresh, never frozen shrimp, too. I also buy fresh-off-the-boat, wild-caught shrimp online from NYC's famed Fulton Fish Market, and it's delivered right to my door in Kentucky, still smelling of the sea. I love shrimp, clearly, and roasting them in the oven is SO quick and easy. So is a quick 3-minute saute on the stovetop in a skillet. Yum! Thanks for all you do!

I have frozen shrimp which is extra Jumbo. 16/20 count.How long would I roast them?

Great Idea! Without heating up your oven, you can fry these shrimp in a pan with just a little water or wine. I make shrimp scampi for hubby often. I fry them in a little butter with parsley, wine, a tad bit of garlic salt and serve over rice or pasta. This gives them a lot of flavor and they are still calorie friendly.

@David - yes, I think a fish market is a great place for thawed shrimp - but I bet if you asked you could get them frozen. Totally up to you. thanks for the question!

@Nancy - I would go with 6 minutes and check them out. It takes so little time to heat these buggers and you don't want them to end up rubbery. Great question!

try this 1/2 pound of grape tomatoes simmer till soft crush with potatoe masher add shrimp till pink then spread crushed feta cheese mix to a pink sauce serve over pasta sorty about the "E"

Joe, I make a similar dish, but I use diced canned tomatoes. To fancy it up, I add some minced garlic and a nice splash of white wine. Sprinkle with chopped Italian parsley at the end. Serve over rice. The feta cheese is SO GOOD with shrimp, isn't it?

WOW! I never buy shrimp because I don't know what to do with them nor do I know what kind to buy (glad you posted a picture of the bag). I am not that great in the kitchen but I LOVE to do dishes. My 12 yr old daughter loves shrimp. Excited to try this method. Thank You!

mostly because i was raised by poor but loving parents in the midwest, I never learned how to cook fish or seafood. As an adult i have discovered that I love both, but have no idea how to cook them. This post gives me hope! I've never cooked salmon either and am afraid to try because it is expensive, but with a good tutorial, I'm in! I've tried cooking fish from the frozen section of the grocery but have not had much luck with it. Most recipes I've found don't use those really thin pieces of fish like the ones that come in boxes or even sometimes bags in the grocery store. Mine just fall apart and seem undone. Any suggestions, recipes or help would be appreciated

I'm on free lifestyle Ww. I skip the oil and put the shrimp n nonstick tinfoil. Works great.
