Eat Asparagus for Breakfast from Eat Real Good

One of the ways that I know that Spring is here is that asparagus starts showing up in supermarkets. I love the stuff and get so excited when I see it priced as low as $1.50 per pound.
Some of us are lucky enough to get a box of produce from a farm, also known as a CSA. A CSA is Community Supported Agriculture and I covered this concept in: Fresh Produce.
BUT, the problem with getting the box is sometimes you don't know how to cook all that produce. Enter Eat Real Good! This is a really awesome website that allows you to plug in the produce you get in your box and it will give you a list of recipes for that produce!
Eat Real Good is free and the recipes look amazing. They have shared one with us below using asparagus for breakfast. (Y'all know how much I love veggies for breakfast).

This recipe is just about fresh, quality ingredients prepared simply. Fix an easy batch of roasted asparagus and use it for several snacks and meals!
How to Roast Asparagus:
To prepare your asparagus for roasting, rinse it, then bend each piece gently and let it snap and break where it naturally wants to. This will eliminate any of the tough, fibrous bits of the asparagus. (You can save the ends to throw in chicken stock, if desired.)
Throw the good parts into a pan, drizzle with olive oil, salt/pepper, and smoosh it all around to coat well. Roast in a 400F oven for 8-10 minutes, stirring once.
Now you have a bunch of bright green roasted asparagus - save some to throw in a salad or to serve with dinner.
Asparagus Muffin Bites
(serves 1)
1 English Muffin
1 slice ham
3 spears roasted asparagus
1 ounce thinly sliced sharp cheddar
Toast an English muffin, then top it with sliced ham, some of the tender roasted asparagus, and some thinly sliced sharp cheddar. Toast again, until heated through and the cheese is melted.
Hole up somewhere with a cup of coffee and enjoy!
