To say that I am a bit obsessed with my waffle iron is an understatement. I have made both an banana peanut butter waffle and a waffle potato bite.

After a serious but brief deliberation, I have decided to give away my stove and microwave and keep my waffle iron. What am I doing with all of these appliances?

What I like about my waffle iron is that I make small amounts of lovely food and it takes me only a few minutes. This way, I don’t end up with too much yummy food hanging around - for example an entire banana bread loaf.

Also, I don’t have to wait an entire hour for something to bake so I cut my time in the kitchen. Win-win!

I have gone through many waffle irons over the years and I find that the best ones are about $40. The $15 ones break way too easily and the $100 ones are unnecessarily expensive. There are a ton of reviews of waffle irons on Amazon so go pick your poison.

This recipe features a lower calorie banana bread. Instead of butter, I use buttermilk - which is flavorful but has much less saturated fat. I also use a mix of whole wheat flour and white flour to give it a whole grain boost.

This dough is really just banana bread!! But, it is much less batter than the average loaf.

You make think this is simply a banana waffle - but it isn't. It is much more dense than a waffle. I toasted this for breakfast, ate it like a cookie with coffee, and tossed it in my kid’s lunch box because it has no nuts (their school has a no-nut policy).

These have an instant portion size which makes it easier to stay in control if your consumption. Freeze some of these for a snack or quick breakfast on the run.

Makes 8 small waffle breads

Ingredients

1 egg
¼ cup sugar
2 mashed bananas
1/3 cup buttermilk
2 teaspoons vegetable oil
2 teaspoons vanilla extract
1 cup white whole wheat flour or ½ cup white flour and ½ cup whole wheat flour
1 teaspoon baking powder
¼ teaspoon baking soda
¼ teaspoon salt

Instructions

Spray a waffle iron with nonstick spray. Using a whisk or a fork beat eggs and sugar in a medium bowl. Add mashed bananas, buttermilk, vegetable oil, and vanilla and blend. Mix in flour, baking powder, baking soda, and salt until just blended.

Drop about ¼ cup of batter onto 4 sections of the waffle iron and cook for 4 minutes. Remove when firm. Enjoy immediately or refrigerate for later.

You forgot to mention your One Minute Waffle Iron Baked Apples! They are really yummy! I've invented something my grandkids call French Toast Waffles - I make French Toast (grainy bread and eggs) but cook in the waffle iron instead of on the stove top. I'll give your banana bread a try. Thanks!

Not sure how this is bread instead of a waffle. This is a recipe for waffles. And, why the sugar?

@IFortuna - well, that is a good point. You don't have to add sugar as the bananas are sweet. I haven't tried it from the standpoint of what is needed for a good texture but I will!

I make banana nut cupcakes (24) with Pillsbury vanilla sugar free cake mix, 3 eggs, 1 mini cup of unsweetened applesauce, 1 C walnuts and 3 mashed bananas. Could I make your waffles with these ingredients?

Thank you for the recipe. I really really really want a waffle iron :) I have so many things cluttering the cupboards though, so I look your suggestion if giving stuff away. Could I cope without a microwave though? :)

@Sara - You can use your frying pan if you don't have a waffle maker. It would be pancakes then.

I just want to thank you for all these great healthy recipes you provide. My all time favorite is the baked oatmeal recipe. I’ve been making it for years. During this time it’s been a real treat. I always have the ingredients around and substitute when needed. ❤️❤️

Can you use something else instead of buttermilk? I don’t use it so I don’t really want to spend money on something I would only use once. Thank You.

Can I use the recipe and make bread in a loaf pan and not waffles??

If SnackGirl does not have a better suggestion, use your regular milk instead of buttermilk.

@Cheryl - For buttermilk substitutes, look on the internet. You can find a variety of them ranging from regular or non-dairy milk + vinegar/lemon juice, to sour cream/yogurt + water.

I don't use buttermilk terribly often, so I buy the Saco Cultured brand dry canister (in the baking aisle). You can add it to recipes with the dry ingredients and add water to reconstitute it. It keeps forever in the fridge and adds delicious flavor to pancakes.

I may try this with oatmilk and a chia "egg" to veganize it. Love my waffle iron(s) too ;-)

No matter the cost I prefer a Belgian waffle iron.

But I tend to be an old fashioned kind of guy. No bananas just lots of butter and syurp.

On the other hand I've used my waffle maker with packaged potatoes. Topped with brown gravy. Not sure if that was what Susan had in mind.
