Are you looking for a way to wow your friends and family while doing very little work? Try these roast walnuts recipes!
I have found two perfect recipes that will not only celebrate the season but are healthy (you don’t need to tell anyone about the healthy part).
It turns out that nuts may be one of the keys to health. From the New York Times article regarding a scientific paper on the Nurse’s health study Snacking Your Way To Better Health:
The more often nuts were consumed, the less likely participants were to die of cancer, heart disease and respiratory disease, and not because nut eaters succumbed to other diseases. Their death rate from any cause was lower during the years they were followed. (The nuts in question were pistachios, almonds, Brazil nuts, cashews, hazelnuts, macadamias, pecans, pine nuts, peanuts and walnuts.)
Not only are you giving a delicious gift – you are giving long life! You can’t really lose (unless you can’t stand the person you are giving these to).
I made two different recipes with walnuts because they are one of my favorite nuts and they scream “holiday!”. These are best when eaten warm just like baked goods. The smell and the texture is dreamy. They also keep really well in a tightly sealed jar or plastic container.
You can also make my fruit and nut bars which are a lot like KIND bars or my almond cloud cookies. The cloud cookies are also gluten-free.
You will need a big bag of walnuts to make these recipes. Look in the produce section for 12 ounce to 16 ounce bags – the baking section usually only has small bags of walnuts.

If you looking for a savory snack, try the rosemary and salt. For the dessert lovers out there, you can’t go wrong with cinnamon and sugar. I did use a tablespoon of butter to deepen the rich flavor of the walnuts.
Rosemary Roasted Walnuts Recipe
Makes 8, ¼ cup servings
Ingredients
2 cups walnut pieces
1 tablespoon melted butter
1 teaspoon dried or fresh rosemary
salt to taste
Instructions
Preheat oven to 375 F. Line a rimmed baking sheet with aluminum foil or parchment paper for easy clean-up and spread out walnuts. Drizzle butter over walnuts and add rosemary and salt. Toss to coat. (You can taste the walnuts at this point to determine if there is enough salt.)
Bake for 6 minutes, stir to ensure even roasting, and bake for another 6 minutes. If the walnuts are slightly browned, they are done. Be sure to check them because they burn easily.
Let cool and eat when warm or allow to cool completely and package for gifts.
