I have found two perfect recipes that will not only celebrate the season but are healthy (you don’t need to tell anyone about the healthy part).

It turns out that nuts may be one of the keys to health. From the New York Times article regarding a scientific paper on the Nurse’s health study Snacking Your Way To Better Health:

The more often nuts were consumed, the less likely participants were to die of cancer, heart disease and respiratory disease, and not because nut eaters succumbed to other diseases. Their death rate from any cause was lower during the years they were followed. (The nuts in question were pistachios, almonds, Brazil nuts, cashews, hazelnuts, macadamias, pecans, pine nuts, peanuts and walnuts.)

Not only are you giving a delicious gift – you are giving long life! You can’t really lose (unless you can’t stand the person you are giving these to).

I made two different recipes with walnuts because they are one of my favorite nuts and they scream “holiday!”. These are best when eaten warm just like baked goods. The smell and the texture is dreamy. They also keep really well in a tightly sealed jar or plastic container.

You can also make my fruit and nut bars which are a lot like KIND bars or my almond cloud cookies. The cloud cookies are also gluten-free.

You will need a big bag of walnuts to make these recipes. Look in the produce section for 12 ounce to 16 ounce bags – the baking section usually only has small bags of walnuts.

If you looking for a savory snack, try the rosemary and salt. For the dessert lovers out there, you can’t go wrong with cinnamon and sugar. I did use a tablespoon of butter to deepen the rich flavor of the walnuts.

Rosemary Roasted Walnuts Recipe

Makes 8, ¼ cup servings

Ingredients

2 cups walnut pieces
1 tablespoon melted butter
1 teaspoon dried or fresh rosemary
salt to taste

Instructions

Preheat oven to 375 F. Line a rimmed baking sheet with aluminum foil or parchment paper for easy clean-up and spread out walnuts. Drizzle butter over walnuts and add rosemary and salt. Toss to coat. (You can taste the walnuts at this point to determine if there is enough salt.)

Bake for 6 minutes, stir to ensure even roasting, and bake for another 6 minutes. If the walnuts are slightly browned, they are done. Be sure to check them because they burn easily.

Let cool and eat when warm or allow to cool completely and package for gifts.

I make cinnamon almonds (sometimes other nuts but these are my favorite) with cinnamon and just a bit of honey drizzled on almonds and toasted in the oven on a sprayed cookie sheet. Everyone loves them and there's nothing processed in them!

These look great! I'll be trying both for sure. My mother makes a less healthy version using a lot of butter and sugar with pecans. Thanks for a healthy alternative! I think there's a typo in the second recipe, though. The walnuts should probably be tasted for sugar, not salt. Thanks again!

LOVE all nuts! Glad they are good for us in reasonable quantities.I toast a few pecans every morning and toss them on top of my oatmeal...So delicious!

Sorry to be the bearer of bad news but I'm pretty sure you have to eat nuts RAW to obtain any health benefits.

I used to work with my cousin at the Cinnamon Nut Hut. We roasted them with water, vanilla, cinnamon and sugar. I bet you could do the same in the oven. I really love all of your ideas! the Santa strawberries were a HUGE it at the x-mas work gathering.

I loved this recipe. I decided to use brown sugar and loved the taste...really good on top of ice cream!

I tried making the Rosemary roasted walnuts, and they came out dry and pretty flavorless. I sprayed them with cooking spray and added some more salt, and they still taste pretty boring and bland. Any ideas for sprucing these up or repurposing them into a different recipe? I doubled the batch and was hoping to give them away as gifts. So disappointing :(

@Brooke - Add more butter and salt. That will help, I believe. I am so sorry that they didn't work for you.

Reboot! I used the walnuts in a simple candied nuts recipe (toss with egg white, sugar, and cinnamon, and bake for 25 minutes), and they came out great. Mostly sweet with a little but of salt and Rosemary flavor coming through. Glad I was able to salavage these. Thanks Snack Girl!

@Marie Not true. Walnuts are known for their high levels of omega-3s and antioxidants - these are not things that diminish significantly when you cook the nut.

Love rosemary. Will be trying this. Also I want to try one using cinnamon, sugar and pumpkin pie spice.

Lisa, I love this research on nuts! I’ve been celebrating for 2 months now (when I first heard this). To add more detail, check out Dr. Michael Greger and his incredible body of research. I’ve increased my seeds and nuts consumption but keep them sugar-free because I’m enjoying food closer to it’s natural non-processed state. Having included a measured amount of nuts in my daily diet for about 20 yrs, I no longer measure! For me, nuts are the best snack on the planet, and real peanut butter -yummy! Dr. Greger is entertaining as well as informing, and constantly updating. If anybody is interested, here are 7 mini-videos he did on nuts and weight gain. After the 10 min. Intro on nuts, the rest are just 1-2 mins. Fun info!

Is the nutritional value based on 100g or the entire recipe (about 200g)

I will try these but wanted to write to totally endorse your gluten-free almond cloud cookies. So very delicious and so easy to make. I’ve made them two Christmases in a row now for my gluten-free son-in-law and he loves them!! We ALL love them!!! 👍👍

Is roasted walnuts less nutrition than raw walnuts? Should I use roasted walnuts to make the walnut milk?

I haven't tried the recipe as yet..but and easy way to open walnuts is to poke a Sharp pointed knlfe into the bottom carefully about 1/4" and twist .pull shells apart slowly to see if you can get the nut out in one piece.

I added to walnuts cayenne and soy low salt farmers dust seasoning and garlic powder!! Very delicious!!!
