I don’t know about you, but I am hot! The heat wave here in Massachusetts made me feel like the Wicked Witch of The West.

Watermelon Appetizer Recipe

“I’m meltinggggg........” I look like her too - flying around my neighborhood on my broomstick.

Using the kitchen is just torture, so I am looking for recipes that don’t use the stove. Check out these Watermelon Feta Bites.

I managed to put just 20 calories of feta cheese on to a hunk of watermelon and created a taste explosion. And, you get to use toothpicks!

My husband called these a “taste explosion” and I immediately thought of Doritos. With just 3 ingredients instead of 33, I think my taste explosion is much better for you.

You get the cold sweet watermelon contrasted with the salty feta - yum! If you have some basil, you will add another dimension of flavor that will include a licorice like taste.

I have used feta with watermelon before in a salad, but the watermelon tends to get soggy. Here they remain separate and you don’t have to worry about yucky soggy watermelon.

Watermelon Feta Bites Recipe

Ingredients

1- 6 ounce block feta cheese
½ pound watermelon
toothpicks
fresh basil leaves (optional)

Instructions

Slice feta into very thin square slices. One ounce should equal about 4 slices. One 6 ounce block should make 24 slices or more of cheese.

Cut watermelon into 1 inch cubes and lay slice of feta on watermelon. Use toothpick to pin cheese and watermelon together (and optional basi). Serve cold and enjoy!

You can make these up to four hours in advance of serving.

I bet these would be delish with mint too (in place of basil - although basil sounds yum!)

Sounds great! I just made watermelon smoothies, also very refreshing. Just blend equal parts frozen and fresh watermelon chunks and it's a heavenly, icy, cooler. :-)

These look great but I find them a bit high in points....wishful thinking I guess...would like at least two for one point just because the fruit is 'free'!

According to WW 1 oz Feta is 2 PointsPlus so depending on how thin you slice the feta you should be able to have 2 squares for 1 PP. Perhaps measure out how many PP of feta you want, then slice it to fit as many watermelon squares as looks good? Looks refreshing.

I've always eaten loads of watermelon on holiday and loved it as it always seems to be irresistibly cheap and delicious abroad (I am from UK), but have not really looked at it here at home as I assumed it would be expensive, and as you say, it's difficult to get through a whole one without wasting it. But this looked so delicious I had to check, to find it is really very reasonable, even here in uk where all our tropical fruit it shipped in. Also with all the tips about freezing it I am now less concerned it will get wasted, or that I'll end up hating watermelon from having to eat a whole one to myself before it goes yucky. The famous Bacchanal buffet at Caesars Palace in Las Vegas serves a watermelon feta salad....there and here on your blog are the only places I have ever seen it! You're in great company!!

Didn't know you were from MA- me too! I make a yummy salad with diced watermelon, crumbled feta and red onions, so I can't wait to try this idea! Yum!
