Weeknight Dinner Plan

January 26, 2020   6 Comments

This weeknight dinner plan will keep you from ordering take-out when you just want to crash at the end of the day.

Weeknight Dinner Plan

Do you see that supermarket up there? Who wants to tackle that after a whole day at work or anytime really. You need a plan before you enter the sliding doors and grab a cart or you might get lost and not come out for weeks.

I hate going to the store without a plan because I always end up buying stuff that I don’t need (and inevitably it rots in the fridge).

My plan is super simple and it comes out of using Slender Kitchen Meal Plans. I get FIVE recipes and I print them out from the internet or tag a cookbook or magazine.

Then, I start the intense list making process. I get a whole sheet of paper and break it up into produce, dairy, meats, and other and create a big list. If I don’t know if I have the ingredient in my pantry, I put a question mark next to it.

I shop in my kitchen for the question marked items and then I go to the store.

Does it take me a while to shop for all the items? YES! Is it worth it? YES!

I come home and stuff my fridge and freezer with all the food. Then, I spend 5 days cooking meals for myself and my family. I don’t have to think - I just do!

Below is a five night cooking list for you to print out. You will have to go to each recipe page to print it (but that will be fast!).

It has it all! Turkey, lentils, chicken, fish…. You will not become bored.

I always buy the pre-washed salad to pair with my meals as it is so easy and I will make my own salad dressing see: DIY Salad Dressing.

Start off the week with turkey pumpkin chili. Why? It is so fast to make and it works great in a thermos to bring to work or school for lunch.

You don’t have to remember to thaw the fish for this quick, weeknight staple. I pair this tilapia with roasted cauliflower or a salad and some crusty bread.

2. Pan-fried Tilapia

If you can set up a slow cooker before you leave the house, this low carb chicken soup will be waiting for you to slurp down. Alternatively, make this on the weekend, store it in a tightly sealed container, and heat it up for an instant dinner.

4. Rosemary White Bean and Kale Quesadillas

Hey, it is FRIDAY - time for some pasta. You deserve a little comfort food for making it through the week. Try this lentil pasta sauce which is not only good for you but fast, easy, and delicious.

Starting with the chili is genius because then you have lunch the next day too! I need to do this with some vegan recipes. Makes all the difference to have the ingredients on hand.

Since it's just my husband and myself we have been doing cooking two large meals on the weekends and then eating them throughout the week. Yesterday was a turkey chili and today is a crockpot of vegetable soup. We round out our meals with bags of salad, too.

Gee, I did something like this a while back. lost track,

I know this a great way to help stay on a healthy food plan, save money, etc. I would like to say that I learned for me I make 3 healthy meals enough for another night of each one. I can cook when I feel I want something else & yet I have these great meals to count on. I must tell you we hit a point of throwing away too much food, I learn to cut back, use up what I had, so 3 good meals cooked ahead works for me! Thank You for reminding me. This was very helpful.

have a great & safe week. Blessings to All! anneippi

I use Slender Kitchen for inspiration and thinking about the week ahead.

Thanks for your plan, Lisa. Looks great!

What are the freestyle points per cup of the chili? it gave all other values but not that one. Thanks!!!

Husband always wants pasta, pizza, baked potato's but he is diabetic. He doesn't like beans(I love them)or yogurt(favorite of mine)but does like most veggies (except broccoli and cauliflower). I dislike most veggies except broccoli, salads and spinach. He likes fish and I don't. So planning meals is sooo difficult.☹️
