I have made decadent food in my Instant Pot - a large amount of jerk chicken wings turned out heavenly - but I try not to cook this way on a daily basis.

When I fell in love with my Instant Pot, I knew I had to make low calorie and healthy recipes for Snack Girl. All of these recipes are low in calories for a main course and healthy. I try really hard to do both.

The year that I started this quest - I got criticized for too many Instant Pot Recipes.

Moi?

Almost all of the recipes below feature chicken. It is clear that not only do I have an Instant Pot fetish but I love cooking chicken in it. The reason is simple - chicken breast remains moist when cooked under pressure.

All meat stays moist when cooked under pressure which is why the Instant Pot is so popular. Don’t want to mess up your food? Use an Instant Pot and walk away.

Please forgive me for yet another Instant Pot post! The latest price on Amazon - see below is $90 (not that bad).

I am happy to see the Instant Pot recipes! Thank you for putting this collection together. I love my IP and having some healthy, lower calorie recipes is a plus.

Thank you for these recipes. I mostly use my instant pot for vegetables.They are going to be very useful. A setting of 0 for cauliflower or broccoli is fab. Baby potatoes have so much flavor and really don’t need butter added. I also love the IP cheesecake, haha!

Still on the fence about getting an IP. Pressure cookers always scared me, but considering the popularity of the IP and seeing all of these great recipes may move the needle for me. I'd really like to make my own beans instead of canned. Healthy cooking is for me so I may treat myself for my b-day next month!

Dolores, you will love it and it is practically impossible to hurt yourself with the IP. Unless you release the steam and put your hand right on top of vent. The lid will not even open if there is any pressure left.

Dolores, I was scared to use one but my daughter in law got me one for my birthday and now I use it daily almost. Other than the loud noise during release, there’s nothing scary about it! Go for it!

Love your cooking under pressure (Instant Pot) recipes. I'm not one to plan meals and take the meat out to thaw until late AM so slow cooker recipes don't usually work for me.

I love using my Instant Pot for hard-boiled eggs. It's the only way I've found that makes peeling them easy. The shell slides right off. I also make large batches of rice and freeze individual servings or servings for two. Yesterday, I made healthy collard greens (family savvy recipe using pre-washed, bagged greens). The cook time is 30 minutes and they were delicious.

Love seeing healthy Instant Pot recipes! Thanks. I was afraid of my Instant Pot when I first got it as a gift. But this morning, I pressure-cooked heirloom cranberry beans with minced onions and carrots as aromatics, and plan to make a healthier version of baked beans using tomato sauce, minced garlic, Worcestershire sauce, and coconut sugar or monkfruit sweetener.

Need low cal whole food plant based recipes please! I have a bean chili and a white bean stew as my go to’s but need more!

There are three appliances I cannot live without:

Microwave; Hot Pot & my toaster oven air fryer! I haven't used the hot pot for sweets, but use it for many of my family's favorites. Anything you put in a pressure cooker can be put into the hot pot. Embrace the kitchen technology, and you'll be so happy!

I love my hot pot! Used to use a pressure cooker (very healthy), but the hot pot is much safer. I make soups, sauces, potted meats, etc. Makes the best pot roast!

With the pot, you can control temperatures and time used. Most things come out moist and cooked.

Here's a hint: used a potholder to adjust steam on the pot. It makes it much safer!... Am gonna use the pot to make Jambalya this am!!!
