A Seriously Cool Appetizer Featuring Watermelon

I don’t know about you, but I am hot! The heat wave here in Massachusetts made me feel like the Wicked Witch of The West.

Watermelon Feta Appetizer Recipe

“I’m meltinggggg........” I look like her too - flying around my neighborhood on my broomstick.

Using the kitchen is just torture, so I am looking for recipes that don’t use the stove. Check out these Watermelon Feta Bites.

I managed to put just 20 calories of feta cheese on to a hunk of watermelon and created a taste explosion. And, you get to use toothpicks!

My husband called these a “taste explosion” and I immediately thought of Doritos. With just 3 ingredients instead of 33, I think my taste explosion is much better for you.

You get the cold sweet watermelon contrasted with the salty feta - yum! If you have some basil, you will add another dimension of flavor that will include a licorice like taste.

I have used feta with watermelon before in a salad, but the watermelon tends to get soggy. Here they remain separate and you don’t have to worry about yucky soggy watermelon.

Watermelon Feta Bites Recipe

Ingredients

1- 6 ounce block feta cheese
½ pound watermelon
toothpicks
fresh basil leaves (optional)

Instructions

Slice feta into very thin square slices. One ounce should equal about 4 slices. One 6 ounce block should make 24 slices or more of cheese.

Cut watermelon into 1 inch cubes and lay slice of feta on watermelon. Use toothpick to pin cheese and watermelon together (and optional basi). Serve cold and enjoy!

You can make these up to four hours in advance of serving.

Totally awesome! I love this! Simple Tasty and low calorie!!!

I'm planning a very simple ''coffee and'' for 4 special couples[neighbors] who are so good to me throughout the year. Last year I just had ''Beach Donuts'', watermelon trees, coffee. I got the 'trees' idea from Martha Stewart I think: cut 1/2'' thick triangles leaving green rind on bottom of triangle then stick wooden skewer up thru rind; I know its probably not new to some but these WM pops looked pretty in a clear bowl, were a big hit and were gobbled up quickly! Now I just have to try something with feta and basil; maybe separately to accommodate my vegan guests. It sounds/looks so good! [BTW, Lisa, Beach Donuts are a local treat on the Ct. Shoreline, donuts made the old-fashioned way, and if you really need to satisfy your donut crave, next time you're even near Clinton, go the extra distance for one, you won't regret it! I know I'm baaad! ;) ]

Watermelon and Feta is a staple in our home for those hot Texas nights....we also use a spice mix made with Thyme(can be made with oregano), sesame seeds, salt, etc. called "Zataar" available in most middle eastern stores to dip the watermelon in..ooh so good..

Your version looks so cute!!

This is also good with mint instead of basil.

Will definitely try this, but 1 point per bite? Won't the points add up pretty quickly?
