I have now been creating low sugar rhubarb recipes for years.

My inspiration – a weird looking vegetable that looks like it is from outerspace – is rhubarb. I happen to love it and you only see at this time of year.

It is so incredibly versatile but many recipes hammer it with sugar. I say NO! You don’t need a ton of sugar to make it into a dreamy dessert (you do need some).

I can attest to the fan base I have created at home with rhubarb. My children shout out, “Hurray! Rhubarb!” whenever I concoct something new.

You can find rhubarb in your produce section – usually in a round basket in front of the strawberries. If you store doesn’t have it, I recommend throwing a tantrum.

Please share your favorite way to cook rhubarb and whether or not you have convinced anyone to try it.

Thank you for the low sugar rhubarb recipes! Where we live rhubarb is as abundant this time of year, as zucchini is later in the summer--you can hardly give it away! These recipes will be great and much healthier for the family.

Hi! My favourite way to eat it is layered with plain greek yogurt...sometimes with homemade or store bought granola...perfect breakfast parfait. The family loves the parfait as dessert as well.

I put a pound of chopped rhubarb in a saucepan with 1/4 cup of sugar and cook it until the rhubarb is broken down and saucy. I might include 1/2 tsp of vanilla extract or cinnamon. I put it in a jar and it keeps in the fridge for several weeks of tart tasty goodness, that I use to top muffins and toast (or ice cream). So yummy, and really low in sugar -- I prefer my rhubarb jam to be extra tart. :-)
