Easy Healthy Grill Recipes

If you don’t want to avoid them –just have them on the side!

I don’t have a problem with hot dogs and hamburgers except that they are not very creative. See that grilled avocado up there? Now, someone was thinking.

There really is no limit to grilling and while I don’t have ready recipes for avocadoes, corn, and cabbage – they exist elsewhere on the internet. The recipes below include peaches, tomatoes, and MUSHROOMS. If you haven't tried a grilled portobello burger - you are missing out. It is really really good. You don't have to think of it as a replacement for meat - simply a new recipe that should be tried!

Go ahead – look in your fridge. You can grill a lot of the vegetables and fruits in there. Don’t try to grill the cheddar, though – I believe that would be a mistake.

July Fourth is a couple of days away and all you have to do is hit your local produce stand for these easy, healthy grill recipes.

Zucchini, peppers, onions, mushrooms, and eggplant-a favorite combo of mine forever from the grille, alone, as a sandwich on some great sourdough bread, tossed with bow-tie pasta, hot or cold-never tire of it. Have you tried slicing carrots diagonally and thicker about 3/8'' to roast--adds tons of sweetness! I do not char directly on grille (carcinogens, no thank you) but use a nice big grille pan. I find we like ours roasted al dente as they hold up better, esp. the zukes. Portobellos are so meaty yet much lighter than veggie burgers with all the fillers, I think. I love mine with goat cheese, juicy tomato slices and lots of basil on a hard roll. Eggplant is good that way too. We don't miss meat anymore. It takes a couple tries to kick the meat tradition but it seems easier in today's changing culture. You have to really want to do it but it's not for everyone -- yet.

I love Portobello Mushroom burgers! had it in a restaurant a few times and started making my own! It's the only 'veggie' burger I can tolerate for now.

I love veg and fruit grilled but what do you grill on my surface is never clean enough for me do you use a grill pan that can be cleaned between uses. I have the grill mats but don't feel like they do a great job in this area.
