One More Thing To Do With Watermelon

Snack Girl has been obsessed with watermelon. My fridge seems always to have half a watermelon staring out at me.

Watermelon Lemonade Recipe

So far I have done three posts on this incredibly delicious and CHEAP fruit:

This is my last watermelon recipe for the summer, and maybe it is the best. In my house, this is the most favorite way for my kids to consume watermelon (though they love to just eat it).

This is watermelon lemonade and it is refreshing and easy to make. The nice thing about watermelon is that you don't need a juicer to get a puree because it is soft.

My blender works great after you coax the watermelon down into the blade (which may take a few tries - but don't give up!).

This is great to serve at a party and can be a very dangerous drink when mixed with a certain unmentionable alcohol (think Russian).

The watermelon can be enough to sweeten the drink - which is great because then you don't have to add any sugar (like many juices do in the store).

Watermelon Lemonade Recipe

(makes 1/2 gallon or 8 servings)

Ingredients

1/2 medium sized watermelon
2 lemons
1/4 cup sugar (optional)

Instructions

Cut up 1/2 watermelon into small chunks. Put 1/4 into blender and puree. If the watermelon doesn't start to churn - use a wooden spoon and press it down between pulses (not while blender is running).

Pour watermelon puree into 1/2 gallon plastic pitcher and squeeze in the 2 lemons. Adjust for sweetness. Serve over ice cubes and enjoy!

This watermelon lemonade will keep in the fridge for 5 days.

could you use splenda or stevia in place of sugar?

I'm not sure why this is 2 points plus without the sugar. After all, it is only fruit.

@TracyP--Good question; it's 2 PP and not 0 because it is no longer "whole fruit", it is juice....think oranges and orange juice....

we had this very discussion on the WW Points+ mailing list the other day. someone said that their leader said if you take a whole fruit and blend it, it still counts as 0 points like the original fruit. But if it's juice from a fruit (like orange juice which is an orange without the pulp) then it costs points.

Unfortunately for me, I'm one of those people who just doesn't like watermelon. I've tried it often in different preparations and I just can't eat it. Too bad for me. But you all can have my share.

Yes! I had a 1/2 watermelon sitting in my fridge. No more - This tasted more like a virgin daiquiri than a lemonade, and my whole family liked it. No sugar needed! Top it with a straw and a little umbrella and it's a fancy drink which makes the kids want it even more. Thanks!

can this be frozen?

I love your " will keep in the fridge for 5 days" I'm lucky if it keeps for an afternoon with two teens and their friends around.

This is great! Add a little fruit or apple cider vinegar (without the lemons) and you have something called a shrub. Almost any fruit can be used. Add a little vodka along with the vinegar and you have an alcohol shrub. These have been popular in the South practically since the South began. These recipes are great! Thanks for sharing them.
