I'm not a fan of feta so I sub some other cheese or cottage cheese or just omit it completely. Lately I've been making zoodles with a bit of pasta sauce and a bunch of veggies (onions, tomatoes and mushrooms on the latest version) and some Bilinski's sausages. Thanks for the recipe round-up, Lisa!

Zucchini is such a great vegetable. The small ones can be used slightly different than the big ones. They are great cold or hot. They can hold different texture, depending on how you cook them.

My most common way to use them is a stir fry in our house that is served about once a week. Our way of using up all the veggies before we go back to the store for more stuff.

Zucchini lasagna just didn't work for me - too watery. Zoodles usually work out better - just don't overcook or they'll get mushy.
