Easy healthy vegetarian recipes are the perfect solution to those who are cutting back on meat or eliminating it from their diet altogether.

My daughter became a vegetarian for a year and then couldn’t resist hamburgers BUT we all benefitted from the experiment. I worked all year on recipes that the entire family would eat (even my meat loving son).

The key to a successful meal was ensuring that the vegetables that I served still had a strong flavor like the umami of meat - which takes a little work.

I will never forget going to my first vegetarian restaurant, The Moosewood Cafe, in Ithaca, NY. My vegetarian friends raved about the food and so I was looking forward to the experience. Perhaps, at that point in my life (early 20s), I was eating too much crap to be able to taste the food - but I found the food to be tasteless. I was disappointed and convinced that vegetarian cuisine was not for me.

Many years later, I found the Grit in Athens, GA and their food is incredible. They serve this dish called Golden Bowl with tofu and nutritional yeast that I miss. Ask me if I would have ever eaten such a thing without the Grit (no way).

Now, I aim for Meatless Mondays and other days to get my quota of vegetables but also save the planet and money. Meat is expensive!! Also, I like supporting my local farmers and I have developed a taste for fresh vegetables.

This is a short list of my favorite easy healthy vegetarian recipes on Snack Girl. Some of these use milk or cheese so they are not vegan. I hope you find a recipe that you like and make it a habit.

Thank you! I always appreciate your vegetarian recipes and I can adjust ingredients to make them vegan so they work for me too. As more people are beginning to cut down on or eliminate meat it’s important to see that recipes like yours exist and aren’t intimidating. Thanks again.

A special thank you for these recipes especially since a) I eat way less meat now that I am getting "younger", b) since my gallbladder surgery vegetarian foods are much more agreeable, and c) being on WW, these foods are FSP friendly. Much appreciated!

Of course, great recipes! Another thought, I like make an antipasti meal any time of day. Here are some ideas, fresh mozzarella, chopped deli ham (Black Forest), Castelvetrano olives, chopped tomatoes, asparagus, artichokes, hummus, feta cheese, and more. I put each ingredient in a separate ice cream size bowl and serve them on a tray. I then can mix them or eat them separately as inspired. At the end of my "tapas", I peel three Mandarin oranges to complete my meal. This is mine, try tailoring your own. : )
