Healthy fall recipes feature squash, pumpkin, turkey, apples, and more squash. This time of year is filled with tasty food that is inexpensive and accessible.
I live in “FALL CENTRAL” AKA New England which is the place to celebrate fall. After many years in an office without a window, I am now looking out at the brilliant colors of fall foliage as I write this. It is spectacular.
Fall food is also spectacular. I drive by farm stands with butternut squash, pumpkins, and tons of apples. My favorite tomatoes are gone but I do not mourn them for long.
I didn’t grow up eating squash and pumpkin but I have slowly developed a taste for it after much trial and error. The best way to cook it is to roast it. The flavors become more intense and the texture becomes soft and luxurious. I love roasted fall vegetables on a pile of arugula with a dash of vinegar.
