Soup is one of those foods that we crave in the winter. It hydrates and warms us and we crave it when we get sick.

I pray that you don’t get sick this winter but if you do - call me and I will bring over my favorite soup.

Healthy soups are so easy. Vegetables become creamy and easy to eat when you cook them in a soup. Sometimes people don’t even know that they are eating vegetables.

Don’t tell them because it will ruin the surprise.

Here is a list of my best healthy soup recipes. They are all on my winter rotaion.

One of my favorite soups to make lately is kind of a Tuscan bean soup. You saute carrots, onion, celery, and garlic then add chicken or veggie stock and cooked cannellini beans. I season mine with a bay leaf and thyme. Rosemary, sage, or oregano would also work well. You can also add greens like spinach or kale.

Just in time! There's a chill in the air here in NY and I have a pot of lentils on the stove as I type. I am definitely going to try some of these vegetarian ones. Thanks for all these yummy ideas!

These all look so tasty. I love soups, they are the OG of comfort foods!

My dad used to make a healthy lentil stew, now every time I make it I think of him. It's a cup each of very fine dice celery, carrot, and onion, 2 Tablespoons minced garlic and a couple bay leaves, a pound of rinsed lentils and 8 cups of whatever stock or broth I have. Once simmered until the lentils are soft, I add a half box of orzo pasta, a jar of spaghetti sauce and 8 ounces of fresh spinach. It's done once the moisture is absorbed and the pasta softens. It is hearty and very satisfying served with some grated cheese.

I make this at the end of the summer when tomatoes are plentiful. I generally cut back on the butter. I also use 1/4 c quinoa to thicken and give it some protein and because I didn't think the rice in the recipe really did much. It is a great recipe for any time of year!

Snack-Girl's Hot and Sour soup - with extra green onions, mushrooms and eggs, and Snack-Girl's Leftover Turkey Chili with corn and carrots added.

My go to soup recipe is Black Bean but I also like to make Lentil. It's easy and filling. I use your recipe but add spinach and hot sauce for the black bean. The spinach is disguised when you use the immersion blender on it. Anything in the crockpot is always a plus for me.

I'm not sure how I missed the tomato soup recipe but I am going to try it once I get to the store. I usually buy the can but it has too much sodium and I am excited to try this!

My healthy soup recipe is 1 ingredient broccoli soup! It was posted on Broma Bakery and was adapted from a Gordon Ramsay 5 ingredient broccoli soup recipe. Here’s what I do-

Steam broccoli in a steamer pot.

When broccoli is soft,let it cool a bit and transfer it to a blender. SAVE THE BROCCOLI WATER. Add 1/4C of the broccoli water and purée until smooth.

Add more water if needed for desired consistency.

That’s it! You could add cooked barley, cooked additional vegetables, cooked ham, seasonings… if desired, but broccoli and broccoli water is all you need. You could also make 1 ingredient carrot soup this way!

Here in coastal Connecticut, we have chilly winds and a taste for homemade soup! I realized that I ate different soups for all three meals yesterday. Your soups look divine. I'll definitely give these a go.
